For the Love of Chickpeas

Greetings, friends! I apologize for my sporadic posting as of late. A lot of things have been going on in my life, and not even my friends that are closest to me are filled in on all of that business. It feels kind of crazy actually, but I am well!

See!

For my blog I’ve been figuring out how to weave my backlog of things to share with you all so it doesn’t seem so random. Themed posts came to mind, and that’s the direction I’m going in for right now until things have settled more and the posts have caught up with my current life. Phew! I am starting to sound more like a strategist right now! Oh that is all part of my plan… not really. I think all the job searching, formal writing, and business matters have gotten to me. Anyway, like all good strategists I’ve got to get the job done! So onward with the post.

The title of this post is straightforward about my sentiments, and the recipes that you’re going to  want to make! Yes, you will want to make these.

This may be featured as a “Thanksgiving” recipe, but I actually whipped this up during the summertime.

Chickpeas were an unexpected ingredient in this recipe.

And did you know that allspice is actually a dried fruit?

I didn’t! Not until I saw this container of these peppercorn-like things in my parents’ cupboard.

So what was this mysterious (not in a cafeteria lunch way) dish I made?

Butternut Squash Mash with Mango, Ginger, and Allspice, which you can easily make veg-friendly by omitting the pancetta. If you love flavorful things, and want to taste butternut squash in a way you haven’t before then I suggest this recipe. It’s very easy to make, and can also be used as a love spell.

African Bean Soup

The common addition of peanuts and peanut butter in African soups really does add something wonderful to them. This one in particular left my family wanting more. Luckily, the recipe makes eight servings, which can be eaten in one sitting.

I am, for the most part, not a fan of parsley.

However, Italian flat leaf parsley walks the fine line for me, and it crossed over to my good side in this tabouli recipe. I’ve also been trying to cook with different grains to add more variety to my family’s diet. They say consistency is key, but sometimes being so consistent can give people an upset tummy.

Now for a sweet take on chickpeas.

I made Katie’sBlondie Batter Dip‘, and you want to know how long a batch lasted me? Let’s just say I managed to incorporate it into a lot of things…

Folding it into homemade strawberry-banana soft-serve.

Plus, eating it by the spoonful like it was pudding, you can imagine a batch didn’t last me too long.

I also made up a hummus recipe

Cilantro Hummus

This is a very fresh and flavorful hummus, which is just what I need to liven my tastes!

Ingredients

-2 cups of cooked chickpeas, reserve some of the cooking liquid*

-2 cloves garlic, crushed

-1 tsp fresh ginger, minced

-juice of 1 large lemon

-2 tbl tahini

-1/2 cup chopped cilantro, you’re gonna love it!

-2 tbl cumin

-2-3 tbl extra virgin olive oil

-atleast a 1/2 tsp of sea salt

*a big can of chickpeas can be used as well

Directions

1. Puree the chickpeas in the food processor, with about 1/4 cup of the reserved liquid to a chunky consistency.

2. Add the ingredients from the garlic to the cumin in the order in which they are listed. Blend until smooth.

3. Pour the olive oil and sea salt in the puree, and mix well.

Being Treated By Others

Thank you everyone for the congratulations! And yes, I am very much looking forward to the future, and sharing it with you. The graduation ceremony is this Friday–whoa I can’t believe it. As for the coconut busting… I think you guys should give it a shot. Maybe let your inner Towanda out (anyone seen “Fried Green Tomatoes”?).

As I was walking up the stairs to my friends place I noticed something magical.

My friend had invited me over for lunch since she had gone to the farmer's market--look at the bounty!

She also brought back bread.

The woman who makes this bread actually grinds the wheat right before she bakes it, so this loaf was incredibly fresh!

Deliciously fresh, from the farm, and from the home.

The beets were simply steamed and drizzled with balsamic, caraway seeds, and sea salt. We made a dressing out of the cilantro with olive oil, balsamic, minced garlic, sea salt, and pepper. Lastly, the salad incorporated all of the different veggies she had gotten. For the bread we dipped it in a mixture of olive oil and black pepper.

At the store this drink caught my eye.

I remembered seeing this on a few blogs, and thought it was interesting. This KeVita drink tasted a lot like kombucha, and I went back to try another flavor: mango coconut and lemon ginger. I haven’t tried the lemon ginger, but I really enjoyed the mango coconut. The original coconut flavor didn’t do much for me though.

The nice thing about my step-dad being here is that we've been going out to eat.

I’ve talked about it on here a couple times, but I have a hard time justifying things when it involves spending money. I have no problem with necessities, but things like going out to eat are hard for me to do. I definitely enjoy it, but I guess I feel like I need my parents “okay”, since I’m financially dependent on them. I know that they wouldn’t say no, but I guess that’s the overly-practical side of me. But enough of that because the thing in life is that not every moment needs to have a reason. There are times to simply be. Let things happen. As Pablo Neruda wrote in the poem “Keeping Quiet“, “life is what it is about.

We went to another local dining spot called The Urban Farmhouse. I remember going there when it first opened back in February of last year, and it was nice to see that this place is frequented a lot. With inviting doors that are as tall as the cafe itself, and an open kitchen… you feel like you just want to sit back and relax. And then you pick up your plate of delicious food!

He got lox and cream cheese with fresh dill.

The salmon was so vibrant! Maybe because it’s caught the old-fashioned way with a hook and line.

Someone that works there highly recommended their strawberry and spinach salad to me.

Fresh organic strawberries and organic baby spinach sprinkled with healthy, fresh roasted almonds and lightly tossed with our Honey Lemon Dressing” I ordered some tofu to go with it, and a bread roll from The Flour Garden with some of the creamiest butter ever. They also have a big jar of the best animal crackers, so of course I got a handful!

I've been inspired by the beautiful salads I've been having while dining out.

Here I made some yellow split-pea crisps to sprinkle on top of a very colorful salad. I just chopped up some red cabbage, summer squash, cucumbers, cherry tomatoes, and an avocado all over a bed of romaine. My dressing of choice for this salad? A dressing named for a goddess.

We also went to one of my favorite local restaurants, Ipanema. One of my friends was working there that evening so it was nice to see him, and he gave us his personal recommendations.

This was delicious and worth waiting for the pasta to be done. Actually, I didn’t mind waiting at all. It was a beautiful day and we were munching on polenta fries with kalamata ketchup. I actually went on bought myself some pumpkin seeds after having this. I loved the idea of using them instead of pine nuts.

My step-dad ordered the chile-braised jackfruit huarache with pinto beans, salsa verde and crema mexicana with spanish rice.

He let me try some of his dish as well, and it was very tasty! My favorite part was the crema mexicana.

My friend got us a slice of apricot almond cheesecake to sample.

This is the place I go to with my friends when we want to have delicious desserts! A friend of mine loves their pies so much that for her birthday she ordered a whole one. I brought back a slice of their Mexican chocolate cake for my roommate to enjoy while she was busy writing paper after paper for finals. Luckily, she let me try some (I was hoping she would!) and it was very interesting. A little bit spicy, and kind of had the texture of a pudding.

The other night I pulled out the cast-iron skillet.

I had a butternut squash sitting in my kitchen for awhile, and I’ve had this recipe for these multi-grain butternut squash fritters bookmarked for awhile as well.

Beau said he finished his batch by eating them like a pancake with butter and maple syrup.

Yummy indeed.

The Extra Special Things

Oh my goodness! I made it into the third challenge! Thank you so much for supporting me. Honestly, the amount of support and encouragement I’ve been given has floored me. I’m very much looking forward to the next challenge. It’s actually coming up very soon, but I’m trying to not let it stress me out to the point where I feel like it’s a daunting task to face. Nope, won’t go there. Moving on is incredibly exciting, yet humbling at the same time. I think it’s because I know that it’s not just all me. So yes, I just want to express again how grateful I am to everyone: the panel, my fellow contestants, and of course all of my friends.

Remember the tasty little bites I posted in my last entry?

Some of you were asking if I made them, and indeed those muffins are homemade! I just used my secret oat-bar recipe that I’m continuously experimenting with, but made them into scrumptious little muffins instead. Also, topped with coconut butter makes them extra tasty! Actually, doesn’t it make anything tastier?

Bubbling kitchen experiments?

This adventure was quite a simple one, but hadn’t been done! I looked up recipes using the keywords: figs and apples. That’s when I stumbled upon this delicious apple-fig compote recipe. The smell was incredibly comforting; Imagine the scent of a fruity elixir dancing through the air. Well, it really felt like it was an elixir because when I served it over some oats in the morning, I was so happy to be awake and enjoying that delicious meal. I enjoyed it so much that I found myself boasting about my wonderful breakfast throughout the day.

Then topped with Greek yogurt, chopped walnuts, dates, and ground cinnamon.

Seriously go make a compote to add to your breakfast, or simply to enjoy alone--you will be so happy you did!

I got myself a tub of mascarpone and used it instead of cream cheese on my bagels.

I smeared one half with mascarpone & honey, and the other half with mascarpone & fig preserves. What a special ingredient for something as simple as a bagel, but who says you’ve got wait for a special occasion to enjoy the things you love. What’s something extra special to you that you like to enjoy on any occasion? I also had a bowl of Greek yogurt topped with a medley of fruits, granola, walnuts, tahini, and honey.

I was risking a bellyache by eating raw cabbage, but I love slaws and it was a risk I was willing to take.

I think my taste buds were way too happy for my belly to even notice because I felt a-okay.

Oh my beautiful beets...

I loosely followed this recipe for “caramelized beets with caraway seeds & walnuts“. I didn’t have caraway seeds on hand so I used cumin instead, and I tossed in some roasted butternut squash as well. The fall harvest is something I definitely don’t mind. What are some of your favorite things about fall?

I felt like using one of my special bowls for this soup!

The other night I made a big batch of roasted butternut squash and sweet potato soup. Oh me oh my! Roasting the vegetables beforehand really does add flavor to this recipe, and it turned out so thick and creamy–my favorite! I served it with some chickpeas roasted in coconut oil & cinnamon, and a bit of tarragon.

Gosh, I have really been treating myself with all of these tasty dishes! I’m glad that I can share the recipes with you all… well except for my secret oat “bar/muffin” recipe of course mwahaha. Maybe one day… maybe. Anyhoo, I hope you all enjoy this crisp and chilly weekend. Just thinking about Sunday makes me all giddy inside; you’ll know what I mean by tomorrow! Not Counting Down the Days

Hello everyone! As I mentioned in my last post, I am back up at school. Although my classes haven’t started yet, I’ve been getting ready for this coming semester. I’ve been having so much fun since being back here. Reconnecting with my friends, and making new ones everyday! Seriously, every day has brought me a new adventure. Anyway, I wanted to talk about how I’ve been doing on my journey to strengthen my liver. I haven’t been doing this for a month quite, but almost! I thought a month sounded like a good amount of time to let my body adjust and do a lot of healing. Does this mean I’m just going to stop after the month has gone by? No, I will continue this, but not so focused on certain foods. While browsing Foodbuzz I stumbled across an interesting article written by RD and writer of  the blog Practical NutritionNour. There was one sentence that really resonated with me: “Enjoy them for the color, taste, aroma, and the whole meal experience, and think less of how they could physiologically affect your body from the inside” I know that recently I’ve been including little tidbits about the various foods I’ve been eating. Of course, there’s nothing wrong with that, but when I’m eating my meal I don’t actually think about those tidbits. When I eat I usually just think of how colorful the food is and the flavors! Everything I’ve been eating has tasted delicious, and that’s something that will never change. After all, isn’t that why people really love food? I’m a creature of introspection–constantly reflecting and observing the world around me and realizing that I’m in it… a part of it. So I choose to live my life as nobly and as compassionately as possible. I care about myself as much as I care about others–and that’s a lot. And isn’t it wonderful that one of the ways I can take care of myself is through food?

Moreover, I’ve got some exciting news to share with you all (more exciting news at the end of the post as well)! I’m sure some of you have heard of Foodbuzz’s Project Food Blog. Since I’m participating, I will be completing the various challenges the judges have come up with. This is going to be so much fun! I hope that you will support me and vote for the entries I submit! I’ll definitely keep you all updated on how it goes down. It would be a dream come true if I became the next food blog star.

The last meal I cooked in Florida.

Sounds dramatic! I decided to cook the red kale loosely using the same recipe that I like to use for other greens. I also made a delicious and aromatic batch of red lentil and date dhal inspired by this recipe, served it over a slighty spicy and spiced sweet potato and butternut squash purée. Once it was served I took a bit of ghee and just let it melt on top.

Rich in flavor and undeniably satisfying.

On my last day in Florida I got to hang out with a good friend of mine that was visiting from Virginia!

We soaked up the South Beach sun and time was of little importance to us. Living in the moment.

Even though most of us lead separate lives now, we never forget our friendship.

A feeble attempt at making coconut butter--just wasn't the same.

My meals have been consisting of a lot of green and yellow colors lately--also a failed attempt at molding the rice and lentils.

The yellowness comes from cooking the onions and garlic in turmeric. Remember the wonderful benefits of turmeric? “In both Ayurvedic and Traditional Chinese Medicine, it is considered a digestive bitter and a carminative. It can be incorporated into foods, including rice and bean dishes, to improve digestion and reduce gas and bloating. It is a cholagogue, stimulating bile production in the liver and encouraging excretion of bile via the gallbladder.” I’ve even heard that it’s good for alleviating arthritic conditions and menstrual cramps!

Garlic, onions, turmeric, artichoke hearts, kale beans, quinoa, shredded mango chutney and sweet mango pickle, flax oil, and cilantro. Ah yes, I cooked a grain besides rice! You know me, I like to keep things different or else I get bored. I’m a gemini, what can I say?

And can you believe that I found a 2 lb. tub of dates at the Indian store for $4.99?

Talk about a great deal! I’ve been loving them dipped in the “coconut butter” I attempted to make, with other nut butters, in cooking, and just plain! Actually, the other day when I had a friend over I asked if he had ever tried dates before. That night he was introduced to nature’s candy, and it brought a smile to my face when he asked if it was okay if he could have another one. Of course! Who am I to be a hog when I’ve got 2 pounds of dates?

Eat the Rainbow

I’m very glad that you all enjoyed the video I made! I definitely want to make more in the very near future. Remember how I had talked about how I was doing things to relieve stress? Well, one of the greatest ways for me is through yoga.

I try to set aside atleast 20-30 minutes a day for my practice.

I’ve also been relieving tension through scent. Let me set the relaxing mood for you all…

Looks like I didn’t grind my flaxseeds enough! Oh well. Anyway, this bowl has peaches, apple slices, and banana slices. Gosh, I really love peaches so much right now, and I’m always reminded of Lauren when I eat one. So I think of you often my dear! What are some things that remind you of someone?

This time I mixed the usual oats with some leftover pulp from one of my dad’s juices (mostly carrots, beets, with bits of kale and ginger). Then I added the fruits and ground golden flaxseed!

And sometimes I like neutrality in my color palette.

Frozen bananas are excellent for adding that cooling factor for oats. Although I do make mine the night prior, but it’s just that much more refreshing. Not to mention, the slices kind of melt in your mouth.

Got to give poopy brown some love too!

I made this bar loosely based on… anything that’s baked with chocolate and bananas! For the ratio of banana chips to dates it was 2/3 cup to 1/3 cup. This was so delicious! In fact, my mom took one of these bars to go when we were at the movies, and as she was unwrapping it I kind of got jealous as the smell was making it’s way over to my nose. Ugh, why didn’t I bring one with me?

Sure, none of this really makes sense together, but who cares?

Much research has focused on the beneficial phytonutrients in cabbage, particularly its indole-3-carbinole (I3C), sulforaphane, and indoles. These two compounds help activate and stabilize the body’s antioxidant and detoxification mechanisms that dismantle and eliminate cancer-producing substances. I3C has been shown to improve estrogen detoxification and to reduce the incidence of breast cancer. In one small human study, researchers found that after I3C was given for 7 days, the rate at which estrogen was broken down through the liver’s detoxification pathway increased nearly 50%.

Sweet-and-sour green cabbage

You know what’s been great? Since I’ve been taking extra care of my liver, I’ve noticed that I can use a lot of recipes I’ve made in the past. The only difference is making a few changes like using ghee for frying instead of another cooking oil. By the way, it’s important to make sure that the oil you’re cooking with is refined to handle high-heat or else it could be releasing carcinogens once it goes over a certain temperature. Labels should disclose that kind of information. For instance, I know that Spectrum’s labels include that information. I’ve also learned to avoid cooking with olive oil at hot temperatures. Ideally, you just want to put it on your food once it’s done cooking. Now where’s the crusty loaf of bread so I can dip it into some olive oil with cracked pepper?

A recipe from my Ayurvedic cook book...

The recipe was baked pinquito beans, but I didn’t have pinquito beans so I just used navy beans as was suggested. This recipe was so delicious–subtly sweet from the apples and honey with a hint of spiciness from the red chile. The garlic and onions have always been a staple in my cooking, but now I’ve been adding fresh ginger as well.

I haven’t made these cheetah rounds in forever! I’ve gotten so use to simply baking whole ones. Oh, I just love sweet potatoes no matter what way I make them… mashed, baked, grilled, or sliced!

More sweet potato love with... what is that green stuff?

It kind of looks like seaweed! But it’s not. I roasted some kale, but not just any old kale.

I found this wonder at our local Italian market the other day--lacinto kale aka dino kale!

I’m eager to try more recipes with this new type of kale I got! When I first ventured into my liver strengthening journey I said that I still wanted to go on food adventures. The last thing I want is to end up being bored eating the same thing all of the time. I actually used to loathe leftovers because of this. I always want to try something new! But now I see how convenient leftovers can be when I barely have time to breathe.

Not sweet potato... but butternut squash!

I was inspired by Lauren’s butternut squash nut butter encrusted fries recipe, and I definitely knew I wanted to give them a go! I used peanut butter instead of almond butter for this recipe though.

These were way more magically delicious than a whole box of Lucky Charms!

Butternut squash will always be one of my favorite foods. As long as my mom’s around there will be atleast something with butternut squash during the week–she loves this squash too! “Oh, and save the seeds and toast them – they’re a wonderful source of nutrition as well as being a delightful and healthy snack! Studies have revealed that they support liver functions and fight various types of cancer.” Also, the vitamin A in butternut squash helps with acne and other important things like the immune system, hormone production, and so many other things. Other foods with vitamin A include fish liver oil, animal liver, apricots, asparagus, beet greens, carrots, pumpkins, watermelon, cantaloupe, sweet potatoes, spinach, broccoli, mangoes, and green leafy vegetables.

Did someone say beets?

I roasted these beautiful beets in the oven and just drizzled them with olive oil afterwards. Then of course came the sea salt and pepper. What are those greens on the side? Why they’re dandelion greens from our garden! Did you know?Dandelion has been used in traditional Chinese medicine as a powerful liver tonic. Dandelion is said to enhance the flow of bile in your body, improving the function of your liver, and remedy liver conditions such as hepatitis, gallstones, and jaundice. A daily cup of dandelion tea is recommended for anyone who feels run-down, sluggish, and over-stressed. Dandelion greens are also an incredibly healthy food — chock full of vitamin C, higher in beta-carotene than carrots and richer in iron and calcium content than spinach.” Whoa! And they actually have a very mild taste. Not like the mustard greens I tried! I now know that I can only handle a small bit at a time or else my nose starts to burn like crazy–kind of like wasabi.

Living In a Daze, Part I

Hi everyone! As the title suggests, I’m going to break up the recent days in to more than one post. I still feel like my two feet have yet to hit the ground. Yes, I am feeling overwhelmed, but that isn’t always necessarily a bad thing. Why am I overwhelmed is the question. Over these past couple of days I’ve had many triumphs, adjustments, and realizations. I just feel like I’m about to start walking on new territory, but at the same time branching my roots out into familiar ones as well. It might sound confusing, and I admit it feels that way for me too! But whatever may be in store, I’m ready! And on that note, let’s jump in!

This chili smelled divine while cooking it. The thing I love about ayurvedic recipes is that they include an array of spices that awaken different tastebuds. Star Anise & Cinnamon Black Bean Chili with Molasses & Chipotle, but I also added some diced sweet potato and coconut oil to my liking. I wanted to show you all what this Betty Lou’s bar looked like. Check it out! Every time I open the wrapper I can’t help but think that it smells homemade. You know when you’re baking muffins and the sweet smell just puts you at ease? M’mm good.

Anyone ready for Florida?

That morning I had the juiciest, sweetest mango ever! Oh my gosh, just thinking about it is making me want go back to this. I had it with Greek yogurt, Udi’s Hawaiian granola (ginger-toasted macadamias, dried pineapple, and coconut flakes), and drizzled with coconut butter. Okay, so the mango alone was delicious, but all of this together… where do I begin? Ah yes, sitting on a hammock basking in the sun. But before we continue, let me put my ice cold pina colada down.

Alas, I’m just stylin’ the pajamas my grandma gave me, and about to enjoy OIAJ!!! Now that doesn’t sound like prison to me. Sunland’s banana peanut butter… you were so good to me!

However, OIAJ wasn’t the only exciting thing happening that morning. No, I had to get ready to pick up my mom!

We came home and I quickly put together our lunches

For myself I had a Garden Herb Sunshine Burger on a bun + ketchup + pepper jelly + onion + tomato, with butternut squash and sliced pear with cinnamon and coconut butter as well.

And for my mom...

This almost looks like a face! She had Ezekiel toast with fried egg whites and green “stuff” on top. The green “stuff” is a quick thing I whipped up: 1 avocado + nutritional yeast + soy sauce + turmeric + a bit of water for consistency. She also had some butternut squash on the side.

My dad picked up some goodies from a nearby local Jordanian restaurant.

Everything is made fresh, and they even grind their own spices and herbs weekly. In fact, they also make a Lebanese pita bread which involves garbanzo, barley, and other flours. My dad got a vegetarian sampler for all of us, and a spiced chicken gyro for them. The sampler included hummus, baba ganoush, tabbouleh, and dolmades.

I also got to take my mom to her first First Friday Artwalk!

It was very cold for her, but she loved all the life going on. She also got to meet some friends I’ve made in college, which is really nice! Now she has a better idea of who I’m talking about when I tell her things that are going on in my life. Anyway, this is it for Part I! Stay tuned for Part II (THE FASHION SHOW!!!) I’ve Got Questions; Have You Got Answers?

Wow, March definitely crept up on us… actually this whole year seems to be flying by so far. This just means spring is making its way here sooner! My weekend was spent re-working my sculpture, writing essays and proposals, and squeezing in some much needed hang out time. Also this weekend, some of my friends were playing at a Haiti Benefit house show–DIY style! My Monday actually started out on a strange note; when I awoke I was greeted to the sight of swollen face… well the right side anyhow. Since I wanted to get that checked out by a doctor right away I had to miss my make-up critique, but I’m not stressing out about it. Health comes before school!

Betty Lou’s Apricot Fruit Bar Pie = deliciously sweet and tangy, especially crumbled over yogurt, caramelized banana slices, and Sunland’s caramel peanut butter. I love how crumbling the bar makes it really resemble a pie of sorts. That morning’s breakfast’s  “placemat” was an old magazine I was flipping through. While browsing, I stumbled across an interesting article that stressed the importance of eating throughout the day to keep energy levels up. I think most of food bloggers are into the habit of eating every few hours, but it seems that most people don’t. Lots of times I overhear people say that they haven’t eaten all day or since breakfast, and I wonder if they’re totally exaggerating or if they’re zombies. My body’s hunger cues chime in like clockwork, or sometimes even earlier. Lately, I find that my body is requiring even more than before. Am I turning into a boy? Hehe! Anyway, if my belly calls for something earlier than usual than I’ll have a snack to hold me over, and the hunger usually comes back around my usual mealtimes anyway. Works like a charm!

Actually, this brings me to a question I have for all of you: What are some savory snack ideas, and what are some of your favorite filling snacks?

Now that my schedule has gotten even busier, more on-the-go meals have been had.

Usually, I don’t care for leftovers, but now they are a blessing. I get to enjoy home-cooked food on the go! I packed a bunch of steamed kale, sweet potato with cinnamon, a cute little jar filled with coconut butter for the potato, and the butternut squash casserole. I also packed a Cranberry Apple Boomi Bar (reminded me of how delicious autumn tastes). I actually got in trouble for eating in class; is it my fault I came prepared?  Just kidding! Anywho, this new class is during one of my usual mealtimes and I don’t like to wait to the point where I’m starving. My hunger escalates pretty quickly so I’m hoping I won’t get in trouble for bringing a more snacky-looking meal. I’m thinking Greek yogurt, a dense bar, and some fruit/veggies. It presents to be an issue on Tuesdays because I literally have a class right after. I’m open to any ideas you all have!

This time around I tried the Betty Lou’s Blueberry Fruit Bar. I had this with yogurt, banana slices, and warmed up cashew butter. Holy yum! Now I’ve officially tried all their fruit bar flavors, and I must say that I was truly pleased with every single one of them. I don’t know how they managed to make them gluten-free and taste like a yummy slice of pie, but they did. If you look into their products you will see how many allergies they take into consideration; they take people into consideration. I’ve had the pleasure of speaking with one of Betty Lou’s sons and I can tell he has a genuine passion for life, family, health, and people; and yes, Betty Lou is a real person and also seems to have a zest for life from what I’ve heard. Companies like this are hard to find, but when I do, I definitely stand behind them!

And she went all out! Dare I say, I think this may be the best pizza I’ve ever had. The thick crust the focaccia gave it reminded me of Sicilian pizza–so good!

I've been putting my hemp protein powder to good use!

I decided to try a recipe that was actually written on the bag: berries, banana (I opted for the fruits to be frozen), milk (whichever you prefer), and the hemp protein powder of course. I’ve already repeated this recipe, and feel free to change up the fruits if you wish (but I suggest keeping the banana). Anyone have any hemp protein powder recipes they’d like to share?

While browsing through Ayurvedic recipes I stumbled upon this little charm...

Date + ginger powder + almond. I’ve also tried this combo with cashew butter, and I highly suggest you try it! When I was reading on Ayurveda, I stumbled upon a very interesting article that I thought was worth sharing: “The Spirit of Cooking”. I agree with a lot of points Harish Johari brought up, and I was introduced to new information as well: “if it weren’t for spices, America might never have been discovered.”

I’ve got quite a few things to look forward to this month: the fashion show coming up on Saturday, my mom is flying into town on Friday. I’m also taking a road trip with one of my best friends down to Florida for spring break. Then at the end of the month I’m going to see Wicked! I hope March has been treating you all well so far!

Treating Yourself Like Royalty

Since it’s NEDA week I wanted to write about treating ourselves not just with respect, but with love and kindness. Honoring yourself. Harboring negative energy towards others, and especially yourself, is a waste of time. Life is too fleeting to dwell on things. So what does giving myself the royal treatment mean to me? Living life beautifully and to the fullest. Accepting the good and the bad without getting my head wrapped tightly around the latter. Just being. Being who I am and not feeling shame. Never contain your spirit–just let it be free! Moreover, I love to surround myself with things that make me happy: friends and family, the arts… creativity, imaginations, comforting smells, spirituality, and delicious food. The list could go on, but I don’t think we’ve got all day. But here’s how I started my Wednesday!

Crumbled goodness

That particular morning I decided to try Betty Lou’s Apple Cinnamon Fruit Bar… let me just call it an apple pie because that’s what it tasted like!!! Note: All of their fruit bars are “gluten-free / low-fat / vegan / wheat-free / soy-free / corn-free / dairy-free.” You can definitely have these fruits bars alone but I had it with yogurt, a diced apple, and Sunland’s caramel peanut butter. I also spread some coconut oil on the bar before I crumbled it because I’m Katharina and that’s what I do. “In conclusion”, this breakfast was superb! Can you tell that I’m enjoying working my way through the amazing  Betty Lou’s sampler package? I really can’t thank them enough.

Acting like a diva is a sure way to wake anyone up!

My professor actually gave me an extension on my piece because he could tell that I hadn’t finished developing it. RELIEF! I was not looking forward to the critique because of that. But thank you all for your kind words on it!!! I will definitely keep you all updated on how the piece ends up transforming. I’m also working on a video right now, and my next sculpture piece.

Thank goodness for leftovers because I came home a very hungry girl after the crit.

I had the last of the Amy’s cheese & pesto pizza. However, this time I decided to throw on some cooked butternut squash. Adding my own twist to pre-packaged food is something I usually do, but I wanted to give the pizza itself a try first.

Tried some new granola bars!

Nancy, over at Granola Gourmet, kindly sent me a sampler package of two of their bars: brownie and spiced orange cranberry. These bars contain no sodium, no wheat, nor dairy. Moreover, they are also safe for diabetics since they have a low glycemic level, and they boast 391 mg of Omega 3’s per serving. So what’d I think?

Brownie: It was definitely rich and chocolatey! I was expecting it to be dry but it surprisingly was not. I also enjoyed the chewy and dense texture of this bar. I also advise drinking this with a delicious glass of milk.

Spiced Orange Cranberry: The orange flavor in this bar was very prominent. I felt it undermined the cranberry flavor and I couldn’t quite make out what was spiced about it. However, the moistness was very nice to bite into, and it didn’t crumble everywhere!

The recipe I was making called for grated nutmeg.

I popped a few in my mouth while prepping. I just love how crunchy they are! Now, what the heck was I making?

Butternut Squash with Carmelized Onions, Chestnuts, and Sage Breadcrumbs

This was one of the recipes from the Veganomicon that popped out at me when I was browsing through it for the first time.

The other day I also attempted to make April’s famous protein brownie batter. This is one chica I definitely trust when it comes to recipes. And it’s amazing because she comes up with so many of these! I used chocolate protein powder and banana peanut butter to make mine. This was so decadent and satisfying to eat. I think I’m going to try vanilla protein powder with cashew butter next.

I had the casserole, a chunk of focaccia, raw kale, and olive oil + balsamic vinegar + cracked pepper for dipping!

It was time for the delicious butternut squash casserole to get in my belly.

This recipe was delicious but next time I will follow their advice and serve it with some holiday cranberry sauce. A tinge of tangy-sweetness would definitely bring this to another level. I loved the textures in this! The crunchy water chestnuts, the soft butternut squash and cannellini beans, and the perfectly caramelized onion all topped off with an aromatic sage breadcrumb crust… yum!

Life is so much more enjoyable when you love your mind, body, and soul. So this is me wishing you a positive outlook on the beauty that you possess.

Don’t Snow on My Parade

This post may be a bit like the weather I’ve been experiencing over here lately–a whirlwind. There has been consistent snow for the past two weeks and there is more to come! Not only has it been snowing constantly but it’s also been super windy. But I haven’t let the weather stop me from adventuring and atleast there’s been plenty of sun to help keep my mood up. Sophia recently asked what we appreciate from nature. Well, the sun is something I wholeheartedly love. It brings up my spirits and I can’t help but feel better on sunny days.

Starting off a sunny day with some chocolate!

I decided to try out another one of the chocolate bars the folks at Newman’s Own Organics sent me. I had only tried their dark chocolates and I wanted to change it up a bit with some milkiness. Deliciously creamy and made me feel like a kid again. Oftentimes milk chocolates get overwhelmed with all the other ingredients, but I like how you can still taste the chocolate in this bar. I feel like milk chocolate is often forgotten about nowadays. But I think dark, milk, and white chocolates all deserve a little love.

And this is how Matilda started out her snow day.

After some hang out time with my dad I went over to a friend’s house. I got to try a most delicious vegetable lasagna recipe she made up + garlic bread (ON HOMEMADE BREAD)! Afterwards we headed to one of the bars around here that reminds me of a tavern.

The place is called Urban Farmhouse Market & Cafe and it’s really neat because you can even go grocery shopping in there. They sell things like organic milk, cake mixes, eggs, quinoa pasta, and granola made by a local Richmonder. We definitely plan on going back for lunch! It also seemed like a really nice place to study and have a nice change of environment.

I met up with Brittany at a local cellar for some wine and chocolate sampling. I haven’t seen her in ages and she’s just as radiant even in the winter! We both brought our dogs, but Matilda was being a brat to adorable little Olive, and Isaac had to bring her back home. I hope they get along next time they meet!

Friday turned out to be an up and down and up day. I got really upset at one point but before totally giving into it I knew I had to do something to help me calm down. I have worked so hard to not succumb to things that in the end are not good for me. I reached out, communicated my feelings, and ended up rising above the stress. I did what I knew would be best for me. So glad I wasn’t incredibly stubborn and didn’t give in. Now I plan on going out with some friends and dancing my worries away! Do any of you find it hard to let things go out of stubbornness?

This weekend there’s going to be tons of love in the air. Who knows what’s in store!!! Either way, I hope you all enjoy it whether you’re single or taken!

Making Up For Not Having a White Christmas

So my friends and I decided it would be safer not to drive out to Charlottesville for the weekend. I’m glad we didn’t go because they predicted 3 ft of snow for that area. I’m not sure how much they ended up getting though.

I have never tried any of the PB&Co flavors but I’d imagine it would taste similar to this. In the bowl I cooked some oatmeal with the last of my chocolate protein powder + cinnamon + coconut oil. Then I added in some diced apples, white chocolate chips, and crunchy peanut butter. So delicious!

I made a bowl of chocolate oats with a banana bruleed in + coconut oil + peanut butter + white chocolate chips. Obviously I loved the peanut butter and white chocolate chip combo from earlier that day.

Steamed kale later massaged in olive oil; To go with the brie I made a caramelized onion-cranberry compote + pine nuts for crunch and earthiness, then I baked some leftover Italian semolina bread. Even the kale with the brie and compote tasted delicious together.

When a friend of mine slept over, we opened up my box of Kashi GoLean Crunch that had been sitting in my pantry for ages--this became part of my snack pictured above.

This snack bowl consisted of Kashi GoLean Crunch + a crumbled Cinnamon Raisin gnufoods bars + almond milk + coconut oil (all warmed up).

Then it was crafting time for me!

I tried another flavor of the 3400 Phinney bars.

It had a delicious bold bitterness to it at the end and a nice crunch from the nibs.

Another new flavor I tried!

I tried the breakfast Sunshine burger. It was yummy but I don’t think I’ll be buying it again. It’s not horrible by any means, there are just other flavors I prefer; like the Southwest and Original (m’mm good). In the bowl is a recipe I got from a Mambo Sprouts newsletter: sweet and tangy mashed butternut squash. I just realized that I forgot the chives! Oh well.

While I was snowed in I took a detox bath and quenched my thirst with something I spotted at the store--mango flavored coconut water!

A recipe I wrote down ages ago and found the other day--smudges and all.

This was suppose to be a Jamaican inspired oatmeal recipe actually, but since I ran out of oats the day before (GASP) I did the next best thing–granola! I opted for Udi’s Au Naturel flavor over yogurt. They were topped with pineapple bits, a sliced banana, coconut shreds, almonds, and maple syrup (the one my friend got for me on her trip to Canada–peeking in on the left side). I loved every tropical bite of this; especially because I am ready for warm weather!

On that same page I wrote down some other recipes and decided to make another one for lunch.

Chickpeas in coconut milk + steamed kale + coconut & cinnamon rice (with coconut oil)

Chickpeas in Coconut Milk: serves 4

Ingredients

1 cup water

10 oz potato, cubed

14 oz cooked chickpeas

1 generous cup coconut milk

1 tsp salt

2 tbl sunflower oil

4 garlic cloves, crushed

2 tsp coriander

1/2 tsp turmeric

1/2-1 tsp chili

lemon juice

Suggestions for serving: naan or rice

1. Pour water into a medium saucepan and bring to a boil. Add cubed potatoes, reduce the heat to low and cook covered for 6-7 minutes. Add chickpeas and cook uncovered for 3-4 minutes. Add coconut milk and salt and slow simmer.

2. Heat oil, low heat. Add garlic and cook, stirring frequently. Add coriander, turmeric, chili, and cook 25-30 seconds.

3. Mix into chickpea mixture. Stir in lemon juice.

Quick dinner after a long day of errands.

After spending the afternoon with my roommate stocking up on goods at Target, Trader Joe’s and Whole Foods I was ready for dinner despite my snacks and yummy sampling! I bought some buns so I could enjoy Angharad’s spicy black bean burgers in burger form. These keep getting better and better! I topped it with vegan mayo, pepper jelly, melted manchego, yellow onions, cilantro, and ketchup. Holy delcious. I also had some steamed kale massaged in olive oil + cashews for crunch. I highly recommend making these burgers. Not only are they delicious, but they are so convenient for when you’re in a time crunch or don’t have the energy to prepare something. Actually, they’re wonderful for any occassion!

Comfort food with a twist...

This was such a great nighttime snack! Now what exactly was this snack? Well I cooked some cream of wheat in almond milk (I used Almond Breeze Original), and topped it with chopped dates, Artisana’s Cacao Bliss, and my favorite peanut butter. All of this melted together. So soothing and perfect for a Sunday night and some reading.

If all Mondays started like this... well then no one would be complaining!

Liz sent me a recipe that I knew I had to make ASAP! I had some leftover coconut milk from the soup I made the day before; Purrrfect for Indian spiced oats with coconut milk. Early classes on Monday = quick breakfasts so I used a packet of Uncle Sam Cinnamon Raisin Oatmeal + Soymilk. I threw in a handful more of oats in there + extra spices. For the finishing touches I swirled in some coconut oil + raisins + sliced almonds + coconut milk.

Can't get enough of the spicy black bean burgers!

I prepped it the same way as Sunday night only this time I had it with barbeque Popchips (better the second time around), and a Bugs Bunny carrot + my favorite peanut butter. Once again, this was quick enough for me to put together without eating my own arm off. For some reason I didn’t realize that my Seminar on Hinduism class ended at 6:40–not 5:40. It didn’t help that my afternoon snack sadly only held me over about an hour and I hadn’t anticipated being hungry that quickly. Apparently today was one of those bottomless pit days and the only thing I had packed was the 3400 Phinney Nib Brittle bar and that didn’t do much except please my tastebuds. Note to self: always keep something substantial packed. I’m usually good about this is if I know I’m going to be on the go, but today I had the leisure of snacking at home. Oh well, lesson learned.
