101 Dalmations!

This is why I believe the number 101 is better than 100! This is reason why I decided to have a giveaway to celebrate this special occassion. Definitely special enough!

Yeah that’s actually my contained version of my excitement! I know I’ve expressed it quite a few times what this blog and all you friends out there mean to me. So what’s my way of celebrating this special occassion? With a snip-it of what it’s like to live in my life for a couple days and a special surprise at the end from yours truly. I’ll be honest, these last couple of days have been rough. But I had a reminder of how much harder things can get when I learned some sad news relating to someone I know. It really helped me push through, and helped me to stay motivated to rise above the stress. Anyway, here’s a little glimpse starting from Saturday night…

A nice way to start a grey chilly Sunday. I swear Nature’s Path makes some awesome granolas for something that comes out of a cereal box. Usually I find those granolas to really be lacking. The two flavors I’ve tried – Vanilla Almond Flax Plus and Hemp Plus are nothing short of delicious.

I decided to go out and check my mail, since I’m special and I get mail on Sundays. I really just forgot to check the day before, but let’s pretend.

I had forgotten my driver’s license and cash in her purse from the night we went clubbing in Miami. I got way more than that! One time someone complimented her on her sweater and she asked if they’d like to have it. This girl means what she says. I had mentioned that I liked her keychain cover, and she remembered that.

And Gio is an adorable 1 year-old.

I did some things around the apartment and before I knew it my tummy was growling for lunch!

I stumbled upon this yummy site full of pasta recipes. I was feeling kind of down and out after some studio time and some “old/new” crush heartache (he decided to go MIA), so I called a good girlfriend of mine to do some retail therapy.

Then we headed to Anthropologie! And what did Matilda do the second we got there? Peed, of course! It was weird because she had never done that before.

Got home and cooked some dinner.

I vaguely followed the recipe for pasta with ricotta, basil, and tomato. On the side are some hot butter and garlic artichokes with grated parmesan. Later I prepared my meals for the next day so I could spend all day in the studio.

Ah, Monday Monday…

IMG_9735I had some European style plain yogurt with Crofter’s raspberry superfruit spread, cranberry cinnamon swirl toast with cream cheese, pumpkin butter, and some slices with Artisana tahini and agave nectar. Oh! And can’t forget the apple I had already started biting into. May I just add that tahini + honey or agave = the bomb.com?

Then it was off to my morning Taoism class - first day of learning some exercises with sticks.

Then I stopped by my apartment real quick to get a snack and the rest of my goods.

U.S. Mills sent me these awhile ago and I finally got around to trying them. I got to try the Honey Graham & Vanilla Creme sandwich cookies and the Chocolate Graham & Peanut Butter Creme kind. Both were seriously so good.

Then I took a break to go to my Literature class.

I made banana dahl + coconut oil with brown rice and vanilla butternut squash mash with cinnamon and ricotta.

Have you guys ever tried the Prana Bars by Divine Foods? Well, I was lucky enough to be sent some to sample for a review, which I will be posting later. The sneak preview – this flavor was incredibly delicious and I could definitely taste and even see the coconut shreds. The sweetness mainly comes from the date paste and agave I believe.

After having a dance party while setting up my piece in one of the critique rooms, I finally got home around 9 pm and let Matilda out to take care of her business.

So Tuesday rolled around the corner and it was critique day. Dun dun dun.

I crushed up Trader Joe’s peanut butter filled pretzels, a fun-size Butterfingers, vanilla yogurt, and Crofter’s raspberry superfruit spread. I had an orange for a vitamin-c boost since I was feeling under-the-weather.

And my sculpture... it also had a sound piece to it.

I was so scared about this critique… nauseous scared.. I wanted to go against my perfectionist tendencies as an artist, and just experiment and go with the flow. That felt so uncomfortable, so a lot of insecurities rose up. However, much to my surprise, the critique did not make me cry, nor did I actually throw up.

So now here’s the surprise! I decided to have a giveaway in celebration of this blog’s 101st post. The prize?

  3. i missed ya that past couple days girlie! i love creating art when i let go of my own perfectionism. i think that the whole perfectionist trait is a big ed thing and sometimes it’s hard to get over, but for some reason i find it easy when i’m sketching or writing a poem. you just gotta let it flow through you! 🙂

    Favorite oatmeal:
    1/2 c. oatmeal cooked in 1/2 c. unsweetened hemp milk & an egg. Add 1/4 c. Kefir, 1 crushed weetabix biscuit, soy nuts & crushed almonds, and shredded coconuts. Then finish off, with dried cranberries and blackberries.
    That bowl is true heaven!

    My current favorite recipe would be classic lassagna but I use a sweet potato sauce instead. Heavenly!

    i love this chunky veggie italian sauce my mom makes:
    sautee mushrooms, onions and garlic (optional- my mom can’t eat them!), zucchini, bell peppers, eggplant, broccoli if ya want…….really whatever veggie………add tom paste and diced tomatoes, and simmer with spices: oregano, pepper, basil, thyme, etc etc.
    then top with cheese, or put over pasta, or even over a white fish! its alll delicioussssss!
    oh you can add kale and spinach too!! 🙂

    Congrats on such blog success! I’ll have to say that [one] of my favorite recipes is something I made yesterday. Stewed green beans remind me of home, and they have such a Mediterranean feel to them. My mom makes them all the time based on a dish she had in Spain. Saute some onion and garlic in olive oil and add a little dry white wine if you have it, and diced canned tomatoes (or whole, chopped, or throw in some fresh if it’s the season) Add the green beans and chicken or veggie stock as needed. I also throw in some tomato paste. Cover it and add liquid if you need more and let it stew. I LOVE the flavors of this dish, especially over rice to absorb the delicious liquid.

    roasted kabocha with fiery cayenne and cinnamon:

    slice kabocha into any shape you like. after removing the seeds, roast them in the oven for 40min under 425.
    after they are soft and caramelized, decorate them with lotsa cinnamon and cayenne.
    serve with side of salads, soup, or greek yogurt. YUM!

    but were do i rave about this amaing post? lady you look stunning in all the photos. and i really really love mathilda inside out. why do i have to be so far from you when yet you seem so near? does that make sense?
    so my favorite recipe is my miso- tofu pasta!
    super simple
    just blend the silken tofu with some miso broth, ginger, rice vinegar, sesame oil, pepper and maybe some spices. bring to a boil and thicken with corn starch or any other thickener (at this point you can add any veggies you want too, like kale, broccoli or mushrooms) and then the sauce can be poured over your pasta! delish and yet so simple!! must try this one!

    I don’t qualify for the giveaway but I’ll write about my too-early-Christmas scramble this morning. Green eggs: egg+avocado scramble. Red eggs: egg+tomato scramble. You can also add nuts (cashew!), seeds, oats, cheese, etc for texture and spices to heat things up. Enjoy with toasted bread.

    1/2 c. oats
    1/2 c. pumpkin
    3/4-1 c. water
    banana slices
    raisins
    pumpkin pie spice

    Microwave on 50% power for 6 minutes stirring once halfway through. Once transferred to a clean bowl, I top it with coconut butter, pumpkin butter, and some sort of nut butter!

    tomato soup! saute onion+garlic+carrot, add 2 cans crushed italian style tomatoes + 1 can white northern beans, a pinch of red pepper flakes, italian herbs: basil, oregano, thyme, rosemary, bay leaf, water or stock, flavorings like tomato paste, ketchup, or whatever. simmer for 20-30 minutes and blend up. (remove the bay leaf of course.) So so good, I make hugeee batches and freeze it, and eat it all winter.

    CHEESY LASAGNA SOUP

    INGREDIENTS:

    1 pound lean ground beef
    1 medium onion, sliced (I like red onions)
    2 large green peppers, cut into 1-inch pieces
    2 garlic cloves, finally chopped (I like the squeezable garlic in a tube)
    2 cups water
    2 (14-oz) cans of diced tomatoes with italian herbs, drained
    1 (6-oz) can of tomato paste
    2 cups uncooked malfada pasta (I can’t find malfada for the life of me so I just used curly noodlies)
    1 tablespoon packed brown sugar
    1 1/2 teaspoons italian seasoning
    1/4 teaspoon pepper
    1 1/2 cups Italian style croutons
    1 1/2 cups shredded mozzarella cheese

    DIRECTIONS:

    1. Cook beef, onion, bell peppers and garlic in Dutch oven over medium heat 8 to 10 minutes, stirring occasionally, until beef is brown and onion is tender; drain.

    2. Stir in water, diced tomatoes and tomato paste. Stir in pasta, brown sugar, Italian seasoning and pepper. Heat to boiling; reduce heat. Cover and simmer about 10 minutes, stirring occasionally, until pasta is tender.

    3. Set oven control to broil.

    4. Pour hot soup into 6 ovenproof soup bowls or casseroles. Top each with 1/4 cup croutons. Sprinkle with cheese. Broil soup with tops 3 to 4 inches from heat 1 to 2 minutes or until cheese is melted.

    Ingredients
    3 cups (12 ounces) shredded cheddar cheese
    3/4 cup butter, softened
    3 eggs
    1/2 teaspoon garlic salt
    1/2 teaspoon onion salt
    9 flour tortillas (6 inches)
    Paprika
    3 celery sticks with leaves, optional
    Directions
    In a food processor, blend cheese and butter. Add the eggs, garlic salt and onion salt; process for 1 minute or until creamy. Spread 1/2 cupful on each tortilla.
    Stack three tortillas, cheese side up for each sandwich; sprinkle with paprika. Place on an ungreased baking sheet.
    Bake at 400° for 10-15 minutes or until golden and bubbly. If desired, add celery to resemble a pumpkin stem. Cut sandwiches into halves to serve. Yield: 6 servings.

  27. favorite recipe? That is like… an impossible question! Um… probably a yog mess of greek yogurt, banana, special k protein plus, kashi vive, and some cashews, dressed with a bit of fake maple syrup. haha.

    This is also another fave tried and true (though I haven’t had it in a while- I should fix that)
    whole wheat pasta with a “meat” sauce of boca ground crumbles and classico tomato basil. Topped with fresh basil and mozzarella and perhaps with some broccoli or artichoke hearts mixed in.

  30. Congrats on your 101th post. Great giveaway. Right now it is soup season so here is my favorite recipe for butternut squash soup

    Ingredients

    * 1 yellow onion, chopped
    * 1 rib of celery, chopped
    * I carrot, chopped
    * 1 Tbsp butter
    * 1 butternut squash, peeled, seeds removed, chopped
    * 1 tart green apple, peeled, cored, chopped (squash and apple should be at a 3 to 1 ratio)
    * 3 cups chicken broth (or vegetable broth if vegetarian)*
    * Pinches of nutmeg, cinnamon, salt and pepper

    *If cooking gluten-free, use gluten-free broth.

    Method

    Combine butter, onion, celery, and carrot in large saucepan. Cook for 5 minutes. Add squash, apple, and broth. Bring to boil. Simmer for 10 minutes or until squash is soft. Puree. Add spices to taste.

    Serves 4-6.

  31. Right now, my favorite recipe is Pumpkin oats:
    1/4 cup old fashioned oats (cooked)
    1/2 cup canned organic pumpkin
    1 tbsp agave syrup (more or less)
    liberal shake of cinnamon or nutmeg
    pinch of no-salt
    *optional add-ins (depending on mood) cocoa powder, walnuts/pecans/cashews, soy-whip, coconut flakes, dandies marshmallows, granola, vegan white chocolate chips, ginger, black pepper

    With that said, I’m not much of a cook and stick to the basics, so my recipe will be boring! A couple (daily) staples are Ezekiel bread toasted with a whole avocado mashed on it; a big bowl of oats made with almond milk, almond butter and banana; and a huge bowl of brown rice with sauteed tofu, broccoli, shrooms and garlic.
    Viola.

    Oh how I love anthro..such cutie and quirky things!

    I am a pumpkin fanatic so my current favorite recipe is a pumpkin smoothie. I had been drinking green smoothies for breakfast all summer, but switched it u to a more “fall appropriate” version!

    I use pumpkin puree, ice, 1 banana, vanilla soymilk, pumpkin pie spice, and vanilla stevia. SO easy, yummy, and healthy..(definitely beats Dairy Queen’s pumpkin pie blizzard which exceeds 600 calories for a small!!!)
