A Friend is One of the Best Things You Can Be, cont’d.

I’m still feeling the warm welcome back and I love it! I had missed blogging and reading about all of you! Each of you has your own style of writing and I almost get the sense that some of you are right there in front of me–in person, obviously not on a screen haha. Anyway,  keeping with the spirit of the last post I’m going to flash back to wonderful times with friends, and what that entailed!

When my mom came to visit, it involved special breakfasts like these...

I went to my first wedding shower for a dear friend of mine.

Afterwards my mother and I met up with some good friends for wine, laughs, and...

Being up to no good!

The next morning I went on a walk with my beautiful mother in a quaint neighborhood along the James River.

Lucky for my mother, Virginia was experiencing unusually warm weather when she came to visit me back in November. She’s a big baby when it comes to cold weather, but it’s kind of adorable and funny to see her bundle up when it’s in the low 60’s

Once my mom left I felt a little empty because I’m so close to her. There have also been some very shaky things going on with my family, and during that time I remember they were really in a dark place. When my mom came to visit I just wanted her to know that there are people in this world that will love her no matter what. I wanted to show her what it felt like to have someone care for you, and not have constant strife. It was heartbreaking to send her off because I knew what she would be going back to, and all I could do was wish that she’d be okay.

But life went on...

and I had to let myself just enjoy the moment. Do you ever get like that? Where something seems so all encompassing that it’s hard to step outside of it? One thing I’ve really experienced through these tough times is that I can step outside of it. I just have to let myself. It sounds easy, but the build up to that moment where you let go… is hard. But once you do it, it’s so freeing.

I’ve said it before, but I like to surround my self with things that do something for my soul. Whether it’s the music I listen to, the way I walk, the food I eat, the people I call friends, the strangers I say hello to, the outfit (or costume) I decide to wear on any given day. Lighting a candle because it fits my mood, sitting in a chair with a book because I plan on falling asleep, or looking at something someone else seems to notice. Appreciating the things that sometimes have nothing to do with me. When I first heard this quote by Nancy Stark Smith something in me just clicked, “the earth is bigger than you, so you might as well coordinate with it.

In this case, the power lies in the homemade relish to make a sandwich extra special!

In Katharina fashion, I took this beautiful and delicious sandwich with me to class, and I thought to myself "I would."

The recipe is “The Veganomicon’s” Roasted Eggplant Muffuletta Sandwich with the addition of smoked gouda… making this not vegan. Seriously though, this sandwich was hitting every inch of my tongue’s palate making fireworks go off. Since the recipe calls to let the sandwich sit for awhile (overnight if you have time), it allows all of the flavors from the relish and roasted veggies to soak in. This is why leftover’s usually taste so great!

Before we knew it, Christmas was already on its way and we put up an Adventskalendar!

We split a yummy milk chocolate every day to countdown till the 24th!

I felt like a little kid again, knocking on my roommate’s door splitting the chocolate with her. Or when she’d peek in to give me the other half on a given day. It’s such a wonderful thing that this little lady is in my life. We had met in a yoga class a couple years back, and who would’ve thought we’d end up living together! She’s such a special person in this world, and someone I feel at harmony with. I’m so lucky to have her just a few steps away, and honored that she sees the same in me.

We all know that food can be comforting as well... corn and sweet potato soup.

I got out my book filled with hundreds of soup recipes to soothe some winter blues. Soups just seem to be the ultimate comfort food during the winter. It turned out looking a bit greenish-brown, but that’s just because of the vegetable bouillon. Anyway, the point is that it was yummy, especially because I love corn and sweet potatoes! The texture from pureeing half of it and mixing in the rest of the vegetable chunks was satisfying as well.

A chickpea cutlet, goat cheese, green pepper jelly, roasted red-peppers, and wilted greens sandwiched between two slices of toasted whole-grain bread. This sandwich was so good that I exclaimed to my friend in class that she should have a bite! That way someone else would understand why I was making “mmmm” sounds while eating.

I also went to a restaurant downtown that I never heard of before called LuLu's.

The restaurant played off of Richmond’s architecture and city skyline, which I thought was really neat. And who wouldn’t love a place called LuLu’s? If you’re in the area you should definitely check them out. They’ve got a wonderful menu with so many choices, it’s incredible. They’ve got dishes from Moroccan-spiced grilled quail, mezze platters, to arancini.

I wanted something comforting for that chilly night, so I ordered the tomato soup with a grilled pimento cheese sandwich.

This is what I call a sophisticated big kid’s meal, don’t you think? It was so tasty, and it was the first time I ever had this traditional combination! You bet I dipped the grilled cheese in the thick tomato soup. Biting into this sandwich filled with ooey-gooey thick cheese i crispy buttered bread was perfect! Actually, before I ordered the soup I wanted to make sure that it was made with a vegetable broth. The waiter thought I meant to ask the chef what vegetables they had used, and he came back with an answer which was more than what I had asked for, “he made the stock out of the vegetables we had in the house, but he can’t remember which ones”. I guess that means that they make everything out of scratch, which always impresses me.

Everyone was ready to eat and enjoy!

We also ordered some desserts to share: an almond tart with homemade whipped cream.

This heavenly slice of pumpkin roll had me saying, "oh my goodness" multiple times.

It was by far the best dessert I’d had since I could remember!

Baking means sharing in my book!

I made a batch of moist vegan pumpkin chocolate, chocolate chip muffins.

I also went out to eat with one of my closest friends and his incredible mother.

We went to one of my favorite places, Cafe Gutenberg, and I ended up ordering what I had gotten last time because I loved it so much…

The vegan caeser salad made with romaine, hearts of palm, grape tomatoes, grilled tofu, and a lemon-caper dressing.

I saw that they also had rolls made by a local bakery, so I asked if I could have that to go with my salad. The tofu they use is the best in the world, and comes from a local commune called Twin Oaks.

Remember those yummy mozzarella bites I featured awhile ago from Farm Rich?

Not only do these taste good, but they’re made with real cheese. Honestly, I wouldn’t have it any other way. Capturing the Spark

I’m going to rewind a bit to… two weekends ago! My mother and I had a photoshoot the NuSkin “Keep My Age a Secret” challenge we’ll be participating in. It was fun to have that bonding time with her, and being the one in front of the camera this time. Anyway, here are some pictures!

Now on the food front… for breakfast I’ve been enjoying a medley of fruits!

I bought a bag of apricots at the store the other day. They’re so hard to find down here! Is anyone else having trouble finding certain foods that are in season? I remember last year when there was a shortage on canned pumpkin during the holiday season–uh oh! Anyway, here’s a little interesting fact I found on these little stone fruits: “Apricot fruits are very useful to those people, who suffer from anemia. Only 100 g of fresh apricot fruit has the same effect on blood flow as 250 g of fresh liver.” They’re also an excellent source of beta-carotene and are useful for reducing infections or skin problems.

My chicka, Liz, sent me this very helpful link the other day: “Ayurvedic Healing Foods“! One of the tidbits reminded me of my friend in New York who’d peel almond skins because of what her cousin, who’s an Ayurvedic practioner, recommended. And I actually thought of her when I was making this recipe…

I made a batch of this recipe so I could make fig tartlets, and this is also delicious on its own or with some fruit–like peaches! I’m just loving peaches right now if you can’t tell.

I had bookmarked her spiced blueberry cobbler recipe. This was so so SO good, and topping it with coconut ice kream (also from this book) made it that much better! I really can’t believe how simple and delicious these recipes are. I’ve renewed this book from the library twice already.

 

This treat is baked however, and it's my own recipe.

 

This week I was inspired by a Hawaiian combination of raisins and pistachios. I used golden raisins, dried cranberries, and pistachios for my secret oat bar recipe. Verdict? Deliciously chewy, moist, and sweet. Making these bars with different variations has become a weekly ritual for me. I set aside some time either Sunday night or Monday morning and get to baking. I love experimenting with different combinations, and with the delicious smells wafting through the air… who wouldn’t make this a weekly tradition?

I tossed these cheetah rounds in coconut oil, then seasoned them with turmeric, curry, and salt. YUM! I love curry powder so much. Have you ever tried adding some to ketchup? It’s so yummy!

I stuffed this sandwich with homemade 15-bean hummus, marinated artichoke, spinach, and mini bell-peppers. For the mixed bean hummus I added extra curry powder because what the original recipe called for just wasn’t enough for me.

 

 

Dino kale salad!

 

I wondered what raw dino kale tasted like. What else went into this salad? Some mixed bean hummus, sun-dried tomatoes, shallot, and sweet vidalia onion dressing. So how was it raw? Not bad, not bad at all.

 

 

And cooked following one of my favorite ways to eat kale...

 

Fry some onions, shallots, and garlic. Then I threw in the dino kale, spinach, cherry tomatoes, golden raisins, mixed beans, and a splash of balsamic. After it was done cooking I poured on some flaxseed oil to get my dose for the meal hehe. I had also roasted some butternut squash tossed in coconut oil and simply salted. I’ve been trying to spice up my meals a bit, since I noticed that my meals were getting pretty boring. They tasted good, but they were lacking creativity.

 

 

Inspired by a Colombian recipe

 

The other day my mom was browsing her Colombian cookbook. She had left the beans to soak overnight, but she didn’t have time to make the recipe–bandeja paisa. It’s basically a platter of various foods from the Paisa region of Colombia. I figured that she wanted to cook the frijoles part of this platter. I read the recipe after I had already cooked the beans, and I realized I would have to change it a bit. Since it called for the beans to be cooked with the ingredients, but no big deal. I just decided to fry the onions, grated carrot, tomato “salsa”, smashed banana, and the beans of course. Then I seasoned it with salt , pepper, and lots of cumin! Garnish it with scallions and you’re set. My mom was very happy when she got home from work, and she had this waiting for her. Note: I used ghee for the frying, and I highly suggest it. I have been loving the flavor that ghee lends to everything I’ve used it in; just imagine a deeper butter flavor. From toast, rice, sweet potatoes, or traditional Colombian recipes–ghee will liven anything up! Even your body. “Indians regard the substance as very important as it could boost overall body strength, beauty, and luster.” Additionally, it’s lactose-free so those with allergies to milk can enjoy this as well.

I put together a mish-mosh dinner: baked sweet potato + ghee + flaxseed oil, roasted beets + olive oil and seasoning, mixed bean hummus, and random celery stalks.

 

 

Not so creative, but it still tastes good!

 

Maybe you noticed the apron I’m sporting here. The last time I roasted beets I had a little accident and nearly stained my shirt. If beets are on the menu, then I definitely plan on wearing an apron! What are some kitchen mishaps you learned a lesson from?

Feeling Nostalgic

I loved reading everyone’s world-class titles! It seems we have a few world-class worriers in the house. Don’t worry I won’t make you fight for first place! But I do have a little challenge for you. The other day I was reading Joy’s blog and I came across a wonderful list to help you stress a little less and smile more: “25 Instant Pick-Me Ups to Get Happy Now!

On a random note, the other day I saw this movie with my mom called “A Talking Picture” directed by the legendary, Manoel de Oliveira. It was about a mother and a daughter taking a cruise from Lisbon through Mediterranean ports, and the Indian Ocean. The little girl’s mother was a professor  and she shared the history of those places, while actually experiencing them for the first time herself as well. There were some parts in the movie where there was a table of people each speaking their native language, yet the managed to understand each other. Their conversations were reflections on civilization. Anyway, the movie really reminded me of my adventures with my mom across Europe when I was little, and how I would question everything. It was just us two, until my mom met my step-dad of course!

One half has melted butter, the other has the homemade macadamia nut butter I made with marmalade. Looking at the picture above I noticed that the strawberries look like obscenely large nostrils belonging to a happy bug-eyed somebody. On the side I had a bowl of Greek yogurt with chia seeds, sesame seeds, and strawberries.

When I was making this I blended the nuts till they got to a creamy consistency. Then I threw in some more for crunch–I’m a crunchy kind of girl!

My dad had also picked up a nutty, honey loaf. This bread is dense, slightly sweet, and just so tasty! One slice has macadamia nut butter with pumpkin butter (great combination take note), and the other slice has coconut oil + cinnamon. I haven’t had that combination on toast in such a long time! And I use to have it all of the time. In the glass I made a parfait of sorts with my favorite Greek yogurt combo lately but this time with apricots and blueberries. And who can forget the baby mango!

Then my sweet tooth politely reminded me that I really confectioner's sugar with coconut oil and cinnamon.

I was bursting at the seams with stuff I wanted to talk about, so I called my girl!

A lot can happen in a few days, and we hadn’t seen each other since Friday so that means we had to catch up on our thoughts on the World Cup. Our plan is to save up money to go see the next World Cup in Brasil. We already came up with a plan and I’m going to start learning Brazilian Portuguese seriously after I graduate in a year. We are also hoping that our easiest plan will work: date a soccer player. Oh, I have some in mind!!!

After a few hours of talking and making our appearance in our swim-suits and cover-ups, we headed back to my place for some popcorn and Sex and the City. Funny story. As soon as I got home and got out of my car, my over-up fell down to the ground. Imagine if that happened when I was getting up from my seat at Starbucks…

The next morning I remembered that I had something chilling in the fridge...

My friend also made key-lime pie out of scratch! I love that I’ve been able to feature some culinary delights by some of my favorite people in the world. Anyway, she said she was inspired by me and attempted to bake this dessert. I was so proud of her and seriously touched. She admits that she barely goes into the kitchen, so cooking or baking is a big step for her. She wanted my approval, and oh my goodness was it given! Key-lime pie is my dad’s favorite so she packed an extra slice for him. Uh oh! I hope he’s not reading this post because that would mean that I just spoiled his surprise for when he gets back from his business trip.

I made a bowl of oats that had some comforting things like apples, cinnamon, vanilla, and peanut butter. Of course, this bowl was enjoyed chilled! My mom has the week off so we dropped Matilda off at the groomers and ran some errands. We came home just in time to answer to our grumbling tummies.

I just got an idea! Going back to the delicious key-line pie my friend made… what if me and her have a weekly dessert night. Then we alternate who makes the goodies every week. What traditions do you have with your friends?

A Cabinet Full of…

You were so good to me!

You better believe this OIAJ was fantastic! Sunland’s caramel peanut butter with apples and oats? Like caramel apples minus the stickyness that gets on your teeth.

This time it was Sunland’s dark chocolate peanut butter. This was so delicious! I sliced a banana and put in a handful of raisins. I thought to myself “hmm… what are somethings that taste good covered in chocolate?” I always forget about raisins!

More more more!

This time I got to use a jar of Blue Diamond’s crunchy almond butter. I also spiced it with my tea masala. The jar was too small to fit the peach slices and mango chunks so I just took bites of each as I ate the OIAJ. Hopefully I continue to be a lucky girl with the OIAJ. I’d actually like to try sweet potatoes in jar–saw the idea over at this cutie’s blog!

Favorite outfit last week!

This is what I was wearing actually when I almost got hit by a car and flew off my bike. My knees and legs got cut up and bruised but atleast no pants were ripped!

Tried a new veggie burger...

I’ve seen many of you rave about Amy’s veggie burgers so I knew I had to give them a try. This is the Texas veggie burger in a ciabatta roll with Bone Suckin’ BBQ sauce + vegan mayo, onions, and lettuce. I think the veggie burger was definitely yummy tasting.

The warm weather has been off and on. We were lucky that day to get lots of warmth and sun.

What the heck are those green things?

Well those are pumpkin seed butter balls. I just took 1 cup of pumpkin seed butter, lots of cinnamon and honey, and mixed it all together. Then I left them in the freezer to harden. They have a distinct flavor but I think the honey and cinnamon helped balance the pumpkin seed butter flavor. Plus, I really love the color!

Well, this semester is quickly coming to an end and I’ve had lots of projects/assignments, exams, projects in progress, celebrations, and life in general going on. Even though I’ve been really busy, I’ve loved it! This is going to sound weird but I feel like I’m being eaten by the creativity monster. Hehe don’t worry it’s a good thing. I also know the warm weather makes it easier for me to just go out there. I hope everyone is doing well and also enjoying life.

The Great Adventure

Hello hello and greetings from the Sunshine state! I’m going to be backtracking a bit though and showing you some new things I tried during the week before heading down south.

Inspired Breakfast

Cinnamon + cottage cheese + NuNaturals vanilla extract on an English muffin; I’ve seen many bloggers prepare this little combo a la K–I love the ring of that! I topped it with Mymoune’s Crème of Dates with Almonds. Check out the whole almond. On the other half of the English muffin I spread on some good old butter and the berry preserves Holly sent me awhile back. I also made a smoothie which entailed: hemp protein powder + blueberries + banana + almond milk. This was a simple yet so delicious breakfast.

Frozen entree worth mentioning

I tried another Amy’s frozen entree and I was not disappointed. My tummy was feeling funky earlier that week and I figured Indian food would help settle it down a bit. This was the Mattar Paneer entree and I loved that there were plenty of cumin seeds. After I snapped this picture I mixed it all together and added in some coconut oil and voila! No fuss meal.

Coconut Macadamia Ball… m’mm good

I remember on this warm and sunny day (spring is finally moving winter aside) I wanted to snack on something that reminded me of Florida. So I went for Betty Lou’s Coconut Macadamia Butter Ball, and I put it in the freezer so I could have it cold. I just love biting into these. There’s something so satisfying about biting into a yummy ball of nut butter.

Speaking of Betty Lou’s, here are some other goodies I’ve tried. Let me start off with the Krispy Bite. Holy yum!!! I think this may be my favorite little snack of theirs, and I think that’s saying a lot because I like everything hahah. But seriously, there is no eating like a turtle when I munch on these. They disappear faster than it takes me to open the wrapper up.

Next up is the Almond Butter Ball. Doesn’t it remind you of the top of a Drumstick sundae cone? I love the denseness and it’s not overly sweet either. They also have a High-protein variation as well, but as far as taste goes… I prefer this one.

Brought OIAJ to class the other day.

I am racking up the OIAJ, aren’t I? This was the last of my MaraNatha cashew butter and I knew how I wanted to bid it farewell–with a tropical flair. I cooked the oats with a tea masala (ginger, cardamom, cinnamon, clove, black pepper, nutmeg, and mace), banana, and almond milk. Then I threw in some mango bits. A little trick I learned is to pour a bit of hot water in the jar before you mix in the oats to soften the nut butter a bit. Then I stir it all together little by little with my special spoon (the one with the long handle). I definitely savored it because these nut butters cost an arm and a leg!!!

Road trip time!!!

This was my first time driving to Florida without my parents and it was so exciting!

Speaking of sandwiches, I completely forgot that the grilled cheese sandwich included one of my latest finds–white truffle oil. So good! Anyway, this sandwich was yummy, and I was able to heat it up in the microwave at a gas station. We snack on these awesome pita chips, Sabra hummus, Pirate’s Booty, granola bars, sunflower seeds–hippie food! But whatever, we eat what we like. We drove through a torrential downpour that lasted most of the second half of the trip. Oh and there was an undercover cop that just pulled in to the highway from the side of the road and cut me off. If I didn’t move over I would’ve collided into it! But we finally made it to my parent’s place!

My mom has been cooking for us a lot lately, but I’ve been helping her out too. I love cooking, but it’s nice to have someone make things for you for a change though, you know? Especially if it’s your mother’s cooking.

The weather down here has been wonderful, but the wind is not our friend. Every time we’ve gone to the beach, we’ve ended up being brutally attacked the sand. But we will return to Virginia as bronze goddesses, no doubt!

3400 Phinney Hazelnut Crunch

Wow! Can’t quite recall when the last time was that I bit into a milk chocolate bar with such a great flavor. The crunchy hazelnut, the sweet milky chocolate, and the subtle salty twist won me over with the first bite.

Wonderfully complex. The curry flavor wasn’t just from the curry powder, but rather a blend of coriander, turmeric, mustard, cumin, fenugreek, paprika, red pepper, cardamom, nutmeg, cinnamon, and cloves. So you can imagine…

More leftovers!

It’s amazing what one can do with leftovers. I used the rest of the angel hair pasta for this dish. I sauteed some mushrooms with onions and then simmered them in a tomato sauce with balsamic vinegar. Using the rest of the sage and pumpkin seed crust mix I made awhile ago, I dredged some tofu in it and baked it till it was nice and crispy on the outside. I also tossed in some pine nuts and the very very last of the sage and pumpkin seed mix.

Now I ALWAYS pack snacks for on-the-go, because you never know when hunger may strike!

I only have one bean burger left! This one I had with roasted red pepper, onions, ketchup, cilantro, pepper jelly, and melted manchego.

I got home from my night class and I just wanted something comforting so I made a cup of hot cocoa with creamy, thick almond milk.

I made a sandwich on this delicious bread (has dried cranberries, sprouted grains, and various nuts and seeds). I filled it with melted manchego, pepper jelly, roasted red pepper, onions, and sweet basil. I also decided to sprinkle on some nutritional yeast on the kale.

Then it was time to take my dad to airport.

I came home, relaxed, and got ready for a date!

We went to his favorite place... a little Vietnamese restaurant.

I’m usually not a fan of brothy soups, I prefer thick purees. I tried his soup though and I would definitely order it for myself next time I go there. I thought it was really cool that the plate full of herbs, sprouts, and lime wedges were to rip apart and put in the soup; as much or as little as you’d like because not everyone’s tastes are the same.

I ordered fried tofu in a sweet and spicy lemongrass sauce with steamed rice.

The place may seem like a hole in a wall, but lots of times those restaurants have the best food! There’s a place down the street actually that serves Korean food and I swear the owner is a mother to everyone. If you’re sick she’ll give you extra helpings. These places seem so cozy that you could eat there alone and just hang out for hours. As for the date, it went well, but no romantic sparks. However, I’m going to keep hanging out with him because I think he’s a good friend and you never know what could happen!

Tiramisu for breakfast anyone?

I tried to recreate one of my favorite desserts in oatmeal form after seeing all of Katie’s creative recipes on her blog. Seriously, this little lady is endlessly creative and she has so much positive energy I can feel it through her words! I cooked my oatmeal in chocolate protein powder and instant coffee. Since I didn’t have mascarpone I subbed in some cream cheese, and added that while the oats were cooking. I topped it with coconut butter, more coffee granules, and a lady finger. Not quite like tiramisu but definitely reminiscent; delicious nonetheless!

On this sunny and re-energizing day I decided to tackle some recipes I had been eyeing for quite some time.

Those recipes, my dears, come straight from The Conscious Cook. I took a break from this book for awhile because I missed making up my own things.

Tomato bisque--another recipe of Chef Tal's that calls for cashew cream.

And focaccia with caramelized onions.

For the focaccia I opted to do 50/50 unbleached all-purpose flour and whole wheat. The dough ended up being enough for two large loaves. One for me and one for my roommate! Might I also add… I’m just going to say it flat out: this was my favorite meal all week and I don’t think anything can top it. Nope, can’t even try. The tomato soup was thick and full of flavors from the herbs and bay leaf it simmered with. I ripped off another piece of the bread to scoop up the very last drops of my soup. Foodgasm at it’s finest. And a pat on the back for me… on both sides! Seriously, I’ve forgotten how amazing and satisfying homemade bread is. As I was kneading it, I was reminded of how much fun the process is.

Her message really resonated with me and I felt it throughout the whole day as the sun was giving off it’s glorious and comforting rays. Wow, it’s not even Friday and I’m already celebrating! I hope you’re all in the same boat. Where should we sail?

Getting Creative in the Kitchen

Ta-da!Banana-Raisin Pumpkin Seed Butter Muffins

A couple months ago I kidnapped a big jar of pumpkin seed butter from my parent’s place. Sadly, the taste didn’t really sit well with me but I figured there had to be some way I could use this! I have seen plenty of peanut butter cookie, muffin, and bread recipes, so why not this little humble seed butter? That’s when these little muffins came about.  Next time I make these I want to use maple syrup instead of sugar–I think it will greatly lend to the taste. Experiments are so much fun! A little side note: seed butters are great for anyone with nut allergies!

Ingredients

Whole Wheat Flour 1 cup

Quick Cooking Oats 2/3 cup

Sugar 3/4 cup

Baking Powder 1 Tbl

Pumpkin seed butter 1/2 cup

1 Mashed banana

Milk of choice 1 cup (I used Almond Breeze Original)

3 Tbl raisins

Brown sugar

1. Pre-heat the oven at 400F/200C for 15 minutes. Grease with little cooking spray or line the muffin tins with paper liners and set aside.

2. In a large bowl combine together the flour, oatmeal, sugar and baking powder.

3. In a small sauce pan, over low heat, melt pumpkin seed butter and banana in milk, stirring constantly. Remove from heat and set aside to cool slightly.

4. Once the pumpkin seed butter mixture is cool, incorporate it into the dry ingredients and stir until just combined. Then mix in the raisins.

5. Spoon the batter into the prepared pan filling it to the top of each cup. Then sprinkle some brown sugar over each muffin.

6. The above batter was enough for 12 small muffins. I took out mine from the oven around 15 minutes, but I think 13-15 minutes should be perfect. I felt that in this recipe the smell of the muffins is an indicator of the doneness in addition to the toothpick test.

Now here are some ways I’ve enjoyed them!

With fruit and caramel peanut butter.

Warmed up with coconut oil then crumbled in yogurt with dark chocolate peanut butter.

I’ve also enjoyed them with a glasses of almond milk, and with maple syrup and ginger syrup drizzled on top.

Breakfast the other day involved the last of the leftover whole wheat yogurt pancakes.

And a bowl of Greek yogurt outshone by the blend of berries, chopped dates, pomegranate arils, and sliced almonds.

One of the pancakes had blackberries and chocolate chips.

I spread the usual coconut oil on the pancakes; but this time I sprinkled on some shredded coconut and sliced almonds, then drizzled on some ginger syrup.

For lunch I quickly assembled this sandwich: dark chocolate peanut butter + dried figs on wheat & oat bread.

After my Literary Journalists class I headed over to the boutique to sign the model contract and find out a bit more information. Sadly, I won’t be able to go on the trip to New York with my sculpture class since the fashion show is on the same weekend. But it’s okay… since I have no classes on Fridays I’m hoping I can head up there soon anyway! After I signed the contract I headed over the lab to work on a DVD to go along with a package I’m putting together for my best friend. I’m so excited about it! Yesterday night I wanted to make something special for dinner. I attempted my very first recipe from my new cookbook, Veganomicon.

Pumpkin Baked Ziti with Caramelized Onions and Sage Crumb Topping

Since this was a vegan recipe it called for a veganized ricotta–cashew “ricotta” to be exact. I also didn’t have oregano on hand so I used tarragon instead and it gave the ziti a wonderful sweetness. Another substitution I had to make was butternut squash for the pumpkin puree. I couldn’t find a can of it for the life of me so I just made my own puree out of butternut squash. The smell as this was baking was heavenly, and the taste was even more divine. I knew I was choosing a great recipe from the very start! Do any Veganomicon owners have any recipe suggestions for moi?

Peppercorn-Encrusted Portobello Fillets with Yellow Tomato Béarnaise and Mashed Potatoes

“A classic béarnaise sauce begins with a hollandaise.” Yellow tomatoes were used (for their bright, yolky color) to make the béarnaise.”

The mashed potatoes also used Chef Tal’s cashew cream recipe.

After dinner I got ready to go out with some friends. Aye aye captain!
I decided to wear my “samurai” jacket. It had been hiding in my closet for a couple years.
We went to a place where there are a bunch of bars and took the bus my school provides to lessen the chances of drinking and driving–what a great idea.

It was such a fun night. We all danced our hearts out till “Last Call” and got hit on by a few guys. It was really funny. At one point I was looking for my friends and some random guy told me they were “over there.” Well, he was right! The ride back was hilarious and loud. I’m pretty sure I could dance all night given the chance. Saturday rolled around and it was also my roommate’s birthday! It was her day to be treated like a princess, so we did whatever her little heart desired–necessary stop at Target and a few thriftstores!

Decided to go for a comfortable yet chic look.

Another “The Conscious Cook” recipe: California “Chicken” Salad

I used seitan instead of Gardein chick’n, but it still turned out a-okay! Since I didn’t have grapes on hand I just soaked some raisins in water till they were plump. The toasted walnuts gave it an extra crunch and richness. And the lime and agave gave it a freshness that reminded me of summer.

A birthday dinner was in order!

We walked over to a southern food restaurant called Comfort. How’s that for a name? I also imagine it would be the perfect name for a breakfast joint with breakfasts we all dream of being served.

I ordered a vegetarian friendly vegetable plate: fried okra, roasted beets, squash casserole, and sweet potato puree.

After I made my order the waiter said that he would’ve ordered the same exact thing! I just remembered these the last time I went to this place and I loved everything except for the beets. That’s weird! I love beets! So naturally I gave them another chance, and I’m glad I did. I also tried a pear cider beer that was so good! No funny face was made afterwards. After dinner we walked home and my roommate tried calling her boyfriend so he could pick up some birthday cake for her. Well his phone was off, but then he magically pulled up in front of us and exclaimed, “I have ice cream cake and lava cake!” What a wonderful coincidence.

On Sunday I woke up to the sound of rain and birds chirping. So I took it as a cue to make it a low-key day and pamper myself.

Star-shaped Baked Oatmeal

I know many of you love baked oatmeal and I had never tried it before. That morning I had time and I had patience. I had seen a recipe for baked oatmeal on Eliza and Maya‘s blogs. I didn’t have all of the ingredients on hand so I improvised.

Baked Oatmeal Recipe: Serves 1

1/2 cup quick cooking/old fashion oats

1 tbsp liquid egg whites (I used melted banana since I don’t have eggs)

1/4 tsp baking powder

1/3 cup vanilla hemp milk (I used soy)

1/4 tsp cinnamon + more on top (I used pumpkin pie spice)

*dash of clove and nutmeg and ginger

2 tbsp raisins

1 tbsp apple sauce (I used delicious mashed sweet potato)

Banana

1 tbsp. chopped walnuts (toasted)

Sweetener of choice

*I also added coconut oil when baking.

Preheat oven to 375. In two separate bowls combine the dry ingredients (oats, sweetener, baking powder, spices) and the wet ingredients(egg white, milk, apple sauce) combine the ingredients and stir. Add in the raisins, or any dried fruit of preference.

Pour in a baking dish lined with parchment paper or just spray a pan with cooking spray. Stick in hot oven and bake for 30 minutes, at about 20-25 minutes into the baking process, top with banana slices so they get all warm and sweet!

Plate and top with walnuts or desired nuts or toppings.

I topped mine with banana slices, Sunland's caramel peanut butter, a dash of pumpkin pie spice, and a last minute decision: maple syrup

This was such a wonderful breakfast! Actually, it was the best breakfast I’ve had in awhile. There was just something so comforting about it. I will definitely be making this more often.

I decided to treat myself to a candle-lit detox bath, a deep-cleansing face mask, some waxing, and nail polishing. It all ended with a restorative and soothing lunar flow yoga practice. I hope you all had an enjoyable weekend and some of you get an extra day off too!

I spy a winning fruit combination.

That morning I tried Udi’s Banaberry flavor – for kids! Overall I really liked the granola except the freeze-dried strawberries threw me off. The banana chips were so good though because added a natural sweetness. I had the granola with a sliced banana, and Sunland’s caramel peanut butter.

After my mom and I got our groove on we came home, got ready, and I prepared something to bring to my mom’s friend’s birthday get-together.

Did you guys know that in Portugal a Christmas Cake called Bolo Rei (“King Cake”) is baked with a “Fava” bean inside. Whoever eats the slice containing it, is supposed to buy next year’s cake.

I got this very simple recipe from The Accidental Vegetarian. Then when I was done I just poured in a small pool of olive oil and freshly cracked black peppercorns. Simon Rimmer recommends serving it with coriander seed flatbread but anything dippable will do.

They haven’t celebrated together in 10 years! The one in the blue shirt lives in Colombia so it’s not often that they’re together on their special day.

I loved being around these women. They were so full of life and just enjoyed each other’s company. I’m pretty sure my tummy was sore from laughing at the hilarious stories they shared – lots of funny confessions too!

Greek yogurt!

The kind folks at Oikos offered some freebie coupons to me to try out some of their products. My first choice was the plain 0% tub of Greek yogurt goodness! I really enjoyed the texture of this yogurt because it was thick but still creamy. Sometimes I find that certain ones can have this strange fluffiness to them. Not to mention, this yogurt is organic meaning it’s authentic and just how Greek shepherds made their yogurt. They have other flavors like strawberry, blueberry, vanilla, and honey that I’m looking forward to trying out.

What a bright breakfast!

Yesterday morning I tried Udi’s original flavor made with “Thick-Cut Rolled Oats, Wildflower Honey, Canola Oil, Raisins, Banana Chips, Walnuts, Cashews, Almonds, and Pistachios.” I had it with a sliced banana, papaya and pineapple bites, and Oikos yogurt. Yuuuuum! I loved the variety of nuts and the dried fruits have this sweetness that I love. Oh, did you perhaps notice my little army?

I usually munch on these while I make my breakfast but this time I thought I would be polite and invite them to my favorite meal of the day.

I made a quick sandwich since I was going to be on-the-go!

Slice No. 1 = Sunland’s dark chocolate peanut butter. Slice No. 2 = Cherry preserves. Chocolate-covered cherries in sandwich form! I think I’m becoming a chocolate lover too! Actually, I think I already am!!! I just noticed that I have chocolate every single day. And I must say, life is good. My friend picked me up and we were off to some thriftstores!

She turned into a Swedish girl and I shared some of my mood-changing lip gloss with her!

Later on I went to the bookstore to flip through magazines for ideas. Cookie ideas! Three-course meal ideas! By the way, I haven’t mentioned this but some time soon I will be hosting my first cooking clinic! It was going to take place this Wednesday but I think that may be too stressful. Anywho, I’m so excited! My mom has also been bugging me about making a Christmas list so I browsed through fashion magazines and fell in love with so many things. I have a feeling my list won’t be so hard to make! I don’t usually ask for presents though because I like to see the thought behind the gift. At some point my mom met up with me at the bookstore and we exchanged magazines and shared some cheesecake and a cappuccino. She always orders a cappuccino and I always steal some sips. But I love that she never minds. We lost track of time and before you know it my belly was telling me “I want dinner!” I was going to prepare something last night but I looked at the recipe and it called for two hours! So I just saved it for another day.

Instead I quickly put this together.

Have any of you tried Mestemacher bread? It’s a brand from Germany that makes all-natural, whole grain bread. Some don’t like it, but my family does! It’s especially delicious with cream cheese and raspberry preserves. Last night I had it with gouda, leftover vegan Caesar dressing, heirloom tomato slices, capers, and small bell peppers. These bell peppers were bursting with flavor!!! Gosh this just made me remember the fresh broetchen that was had every morning when I lived in Germany. German bread is so good! After my dinner I decided to relax and take a bubble bath.

I poured so much of the bubble bath liquid in before I turned on the jets. So once those were turned on the bubbles went above my head. Santa Claus beard! Sometimes I think we forget about little things like bubble baths, cozy spots, or anything else. A friend of mine takes bubble baths almost everyday, and I think that’s a wonderful idea. Maybe for you it’s not specifically a bubble bath, it could be picking out a delicious recipe, or a morning stretch. Whatever it may be, may it bring you joy!

What Makes You Smile?

I’m going to start this post off with something that made me smile about a second ago. I just had a most delicious cup of tea I got at a coffeeshop. I had green tea with jasmine & lemon.

So remember when I said that I always say I’m going to get a rain jacket and I don’t, and then it rains?

I finally got one!

When I got back from shopping I started to make my lunch.

I baked some sweet potato fries with Old Bay seasoning and cumin. I also baked some Gardein chick’n tenders as well. I squirted ketchup on both and sprinkled some curry powder on as well. I made something of Sophia’s but with a different texture. Rather than make her kabocha soup with bacon and goat cheese– I made it a mash with coconut oil. I also subbed out the bacon for fakin’ bits. And that cute little chocolate cup? This time I tried a Newman’s Own Organic Dark Chocolate Peanut Butter Cups. It tasted good, but I wasn’t too keen on the gooey peanut butter middle. I was hoping it would be a bit more solid.

I've also been working on my project.

I started carving some wood yesterday. And after about 6 hours of that I realized I want to keep my thumb – it was so sore!

Granola bar!

I tried another 18 Rabbit granola bar that was graciously sent to me. This time it was the Funky Figs & Cherries. First off, I love the names of the flavors – they’re so much fun! I just heated it up and crumbled it over some vanilla Greek yogurt, and dark sweet cherries. This one was also very granola-y, however the first flavor I tried (Cheeky Cherry Chocolate) is the best so far. I swore I also tasted some chocolate in this one. Silly me didn’t check the ingredients though! Oh well, what matters is that it tasted good, right?

I had a little mishap with my lunch.

I had been cooking some kale on the stove and I went away and completely forgot about cooking, until I smelled something burning! I quickly ran into the kitchen and took it off the burner. Although it shriveled up a lot, it still tasted very good. May I suggest sautéing kale in a mix of olive oil, balsamic vinegar, honey, and s&p? I also toasted a quick sandwich: goat cheese, basil pesto, and tomato with balsamic vinegar.

Yesterday, I got a bit of relaxing time in. I just did some beauty things and had dinner roasting and boiling away in the mean time.

I roasted some kabocha chunks, and boiled some edamame and quinoa pasta. I tossed it all in coconut oil, lime juice and s&p, then drizzled on some tamarind-date chutney. One word: yum. I haven’t had edamame in forever and I just found a great edamame succotash recipe I must try.

Now we're a little more caught up now.

This morning I decided to try the cranberry flavored Heart Thrive. I crumbled it over some vanilla Greek yogurt mixed with pumpkin puree. I also drizzled on some cashew butter and tossed in a handful of dried cranberries. To make the Heart Thrive less dry I heated it up in the microwave and spread on a bit of coconut oil. I must say I really enjoyed this flavor! It was perfectly tart and had a much stronger flavor than the others I tried.

I only had one class today, so that left me with plenty of time to run errands and prepare some things for when my mom arrives tomorrow. I’m so excited!

Quick lunch

I got home and I was so hungry so I had some hemp brownie bites while I quickly prepared my lunch. No, not special brownies! I followed a BBQ Shepard’s Pie recipe from the Sunshine Burgers website with the BBQ flavor. Basically, I roasted corn, some cubed potato bits, and mozzarella in the oven. Afterwards I just drizzled on some BBQ sauce. I also had it with some beautiful blanched kale. I love that green!

Tomorrow is Thanksgiving and I’m excited. Although I’m having a rather untraditional Thanksgiving (when is it not?), it’s going to be so nice to be with my mother. Since her flight comes in around 2, we’ll be having a Thanksgiving dinner. Which means she’ll be helping me in the kitchen! We make a great team. Anyway, I wanted to know what makes you all smile? I know for myself, it’s mostly the little things that cheer me up. For instance, when I take Matilda on walks I always notice the little quirks about Richmond. There are a lot of characters around here and they definitely make sure to leave their mark. Things like painted ice cream cones cut out of cardboard hanging on a string over a telephone line. I wish you all a wonderful Thanksgiving! Aside from having delicious food, I think the most important part is to enjoy being with people you care about. And being around those people can make a world seemingly filled with troubles, a much better place.
