Hello, Hallo, Hola!

Surprise, surprise! Oh boy, where do I start? It’s been quite awhile, and I’ve got a lot to share. Everything starts from somewhere so I’ll just start with this…

The past couple of months have been hard for me. For awhile it seemed like all of the conveniences in my life started disappearing one by one. You know when you feel like everything in the world is falling out right from underneath you? That’s how I felt for awhile. But you know what? Over the years I’ve learned from my past demons that talking about how you feel is important. Say it out loud to a friend. That’s partly what they’re there for, and it’s wonderful! Yeah, everyone knows that someone out there in this world has it worse, but it doesn’t make things any better when you just want to vent. As cheesy as this sounds, I get by with a little help from my friends. I hesitated at first to share my burdens with my friends because I had been betrayed a couple times in the past by “best friends”. I think I’m at a point in my life though where I know to choose my friends wisely, and I definitely have. Time and time again my friends reassured me that they will be there for me, and that it’s okay. What a relief. I also reminded myself of the strength I have inside me, the blessings that will always be in my life, and the notion that life goes on. Whatever happens, happens.

Anyway, I know that was really vague, but I’ll talk about it more in my catching up posts.

Awhile ago I had received a mysteriously large shipment…

Foodbuzz had offered to try out some loaves of Nature’s Pride OvenClassics recipe as part of their Tastemaker program. Oh all of the wonderful things I could use bread for!

Toast for breakfast, capital idea!

One slice of honey wheat with butter, and a slice of the oatmeal kind with mascarpone and honey (oh fancy!). Two thumbs up for both slices! Especially the buttered one.

Now in sandwich form.

The slices were a bit too big for my bean burger, but I didn’t mind. It still tasted good! Usually I go for bakery or sprouted breads, but there’s no comparison when it comes to buttered toast. This kind of bread is perfect for that!  And of course it’s good for other yummy things too. Now that I’m thinking about it… I wish I had made French toast with them!

Around that time I also made some vegan parsley pesto.

I’m not the biggest fan of parsley, but I had a bunch of it just sitting in my fridge. Things don’t go to waste when I’m around… not under my roof. That’s when I decided to make the pesto! Something I would surely like, and I wouldn’t be letting the parsley just wilt away. Pesto can be used for so many things! In sandwiches, as a pasta dressing, a dip for crackers, mixed with an aoli, or whatever else you can think of!

Something else I like to make at home... hummus.

Not just ordinary hummus though. For a little kick I made it with some horseradish cream. If that’s your thing you should definitely try it. Just follow a basic hummus recipe, and add in the horseradish cream to your liking.

I finally got around to making this recipe that I’ve had my eye on, and I had all of the ingredients on hand. Fantastico!

Now let's hop on over to the opposite end of the taste spectrum!

Remember when I made those raw energy truffles? The ones that reminded me of those delicious Ferrero Rocher chocolates? Well I decided to make some using dates, Bellagio’s gourmet white chocolate cocoa mix, dried strawberries, pistachios, and cashews. Each time I popped one into my mouth I smiled and wished that it could last forever! So satisfying and sweet. Yum!

So with that I just want to let you all know that I am back in the swing of things, and I can blog again! There’s no way I would disappear on you guys for forever. Expect some flashbacks and other exciting surprises that I can’t wait to share with everybody. I’m so excited to click the post button! I haven’t done this in awhile! 1… 2… 3… AH!

Winter Days

Many of you asked me about the brown rice cream in my last post. The company Erewhon makes it and you can order it online or check to see if it’s at your local grocer. It’s a really great 100% organic creamy cereal that’s a bit heartier than cream of wheat and is also gluten-free.

On the topic of answering questions, if anybody has any others for me regarding anything, don’t be afraid to ask! I’d be more than happy to answer.

The heavenly smell of the caramelized banana was wafting through my apartment.

This bowl = Oikos yogurt + Udi’s Hawaiian granola + caramelized banana + Sunland’s banana peanu butter. Let me remind you what’s in the Hawaiian granola (which is my favorite by the way)… ginger-toasted macadamias, pineapple, and coconut. I also did something special to the yogurt–sweetened it and also added a bit of coconut extract to give it an extra tropical flair. Yuuuuum!

I quickly put together this lunch before my Literary Journalists class.

The rest of the Health Valley vegetarian chili mixed in with bulgur wheat, hickory smoke sauce, corn, and mushrooms. I also had a side of steamed kale tossed in olive oil.

Something new to try...

Remember when I found the new caramel Oikos flavor in my last post? My first thought when I saw it I was disappointed because it looked like the plain yogurt. But then it occurred to me that it was probably at the bottom of the cup. Correct-o-mundo! First I tried it alone and I have to recommend this to everyone! There was nothing weird or funky about this. The caramel and the Greek yogurt blended together smoothly and tasted so yummy together. It’s sweet indeed, but it didn’t have an artificial taste.

Then it hit me--combine a diced jazz apple with the caramel Oikos...

And another idea hit me!

I wanted nuts but also something crunchier. Solution? Top it all off with vanilla & almond granola. Caramel apple much? This was refreshing and full of flavor!

For my to-go dinner I used a Sabra to-go cup and mixed in some pesto and cumin.

I had to go to photoshoot that night for a Valentine’s Day ad for a hip restaurant around here. I’ll let you guys know when the pictures come out! It was very different to be the one in front of the lens, but so much fun!

The other day when I saw hot cocoa in Holly's post I made some that night and I stumbled upon something I miraculously forgot!

Maya’s homemade marshmallows she sent me awhile back! How did I forget I still had some left? Well I knew just what I wanted to use them for. I already knew they were delicious alone and with hot cocoa, so I wanted to incorporate them into my favorite meal of the day. I made a bowl of oatmeal with chocolate protein powder, hot cocoa mix, coconut oil, and topped them with the lovely marshmallows. On the side I also had a sliced apple with Sunland’s caramel peanut butter.

They started to melt right in!

I made a tzatziki sauce with of Oikos plain Greek yogurt + other various ingredients.

The recipe can be found here! I also added in a bit more garlic because I’m a lover.

Such a refreshing lunch... in the middle of winter!

I made a falafel wrap and a salad on the side–both topped with fresh and creamy tzatziki. The falafels I made the other day were definitely winners!

So. Good. I literally stopped everything to just sit and enjoy every bite of this wrap.

More snacking on the go!

I got back in touch with autumnal flavors with the Maple Pecan Boomi Bar. I was asked to go shopping with a guy friend of mine. He said he needed a lady’s expertise to find the right button-down shirt. Too funny!

And then I was asked if I could be treated to coffee. Yes please!

We both ordered soy cappuccinos and I dusted mine with the dolce spice. Not sure what it is, but it sure smelled good!

After finding the perfect button-down and some other things we headed back home, but he had to make a quick stop at Trader Joe’s. What?! I got to go twice in one week! One of the cashiers swore he saw me riding my bike on a road I know I probably wasn’t cruising down recently. I’ve been told many times that I have a doppleganger walking around. Hmm?

At some point Matilda let us know that walking time was over so I picked her up and ran back home to warm my poor baby up.

Then I started to prepare a hearty meal for us--perfect for a snow day.

Such a comforting meal.

I just started to cook things that I felt would be delicious together. I cooked some bulgur wheat. Then sauteed onions and garlic with curry and cumin. Then I added the water and red lentils, bay leaves, diced tomatoes, green peas, hickory smoke, vegan Worcestershire, and red miso paste. After it was all done simmering I mixed the bulgur wheat, lentils, and swirled in some coconut oil for the final touch.

Here is some exciting news that I have to share with you all. Remember in my last post I talked about being very busy but enjoying what I’m doing and trying new things? Well recently I went to a model call for a local boutique around here. They’re hosting a fashion show featuring local talents and what not. I decided to give it a try and people of all sizes could come! I seriously thought I wouldn’t get a call back because I was lacking that “model attitude” when I did my walk, but maybe they saw something in me because I got a call back and I’m in!

I hope all of you are enjoying your weekends whether you’re snowed in, bundled up, or soaking up the sun even! Tonight I plan on going bar “crawling” through the snow with some friends. Should be fun!

Finally

Hello everyone! I hope you have all had a wonderful wonderful week. For some of you, the holiday festivities have already started. Would anybody care to send me some delicious latkes? Mwahaha! Anyway, I really don’t know where to start. The past week was filled with finals, papers, and catching up with friends before my road trip back to Florida. So that’s where I am right now! And if anybody wants some sunshine, there’s plenty to spread around.

I’m going to start the post off with some more pictures from Art Basel.

After a bad experience with airport food – stomach flu – I’ve been weary of eating it so I pack my own stuff.

Lunch for two

Soba noodles, edamame, a medley of vegetables + lemon juice + coconut oil + salt

While I was away I received a wonderful little package.

Bekah lovingly made all these wonderful munchies. Coconut chia granola, cumin, cinnamon + maple “scented” almonds, and pumpkin chocolate chip cookies. Everything was taste tested by moi, and my parents. Well my mom didn’t get to enjoy the cookies since she wasn’t in Virginia. So delicious! Hey Bekah, you need to share your secret on how you made the granola – it’s incredible!

Can you tell that I love green? I drizzled sesame oil on top of it all and sprinkled on some toasted sesame seeds as well.

I smuggled an acorn squash from my Florida and I was ready to eat that baby! I roasted it with Canadian maple syrup, cinnamon, and coconut oil. I also made my mom’s secret recipe for red lentils with coconut oil. Can’t forget the sweet potato!

Persimmons

I always think of my darling darlings when I eat one! They’re so good with vanilla almond granola, vanilla yogurt, and cinnamon. Is there a certain food that just seems so precious whenever you eat it? A few on my list are figs, persimmons, dates, and white peaches.

Kale with toasted pine nuts and freshly grated parmesan. Someone baked tater tots – yay! Tater tots just sound so cute! I also had some Gardein crispy tenders. I squirted on some ketchup and Old Bay seasoning. I was a little kid that really liked their vegetables!

So easy and delicious!

I used up the rest of the penne pasta in the box. I sauteed some red onion, Tofurky Italian sausage, and garlic. I mixed it all together with homemade basil and toasted pine nut pesto, then grated some parmesan on top.

This papaya was grown in my parents backyard AND it's organic.

Even with this picture you can see that this papaya was bursting with flavor. BURSTING!

My roommate’s boyfriend made this delicious thick carrot soup. I decided to incorporate it into my dinner. Thick carrot soup, kale, gnocchi with pesto, and parmesan. More please! Later that night I decided to take Matilda on a walk on one of the avenues with lots of pretty houses.

Salted edamame + carrot sticks. Sandwich: cream cheese, tomato slices, and the last of my pesto! Then I was off to my last final exam of the semester. The trick is to think positive because most likely you do know your sh!t.

Last night in Richmond I had dinner at a friend's.

Maybe you recognize the Hello Kitty sandwich container? Afterwards we had some hot cocoa and were stuck to the space heater like mosquitos to a zapper! A friend of mine was playing a free show that night so we headed over there close to the time they were going to start playing.

Every band was awesome and so full of energy.

There were three couches set-up movie theatre style so comfort was thought of! It was a very cozy environment and everyone was into it.

They also had some random projections playing.

Well that was my brief recap of my week! My semester is done and it’s time to relax. And now that I’m back in Florida… you know what that means! Well, one thing I learned this past week is to “never allow someone to be your priority while allowing yourself to be their option.” Couldn’t have said it better myself, Mark Twain. Anyway, I hope everyone is doing wonderfully and surrounded with honey bunches of love!

Inspired Eats

Hello hello there! I am so happy to say that these past few days have been awesome. I think it’s the whole mentality I’m trying to maintain to get me through the winter.  It was actually the title for a recent post of mine, “life is what you make of it.” The winter doesn’t have to suck the life out of me (okay I’m being dramatic here), but instead I focus on what I’m doing now and all the positives of this holiday season. And all your answers really stuck with me and reminded me of so many things I have to smile about. Don’t we all?

Here are few of my reasons, inspired by some of you, in the past couple of days.

A different version of frozen yogurt

I took a container of So Delicious coconut milk yogurt and stuck it in the freezer.

Two cookies for good measure!

The night I received the package I had a couple of Holly’s homemade vegan pumpkin molasses cookies. Wow! These were so good, I’m glad she shared her recipe.

Inspired by two very special ladies.

The other day I saw that Maya and Eliza had each made a bowl of gingerbread-inspired oats. Do I need to explain? This is why I love breakfast. When I’ve had a delicious breakfast then I know it’s going to be a good day.

On my day off from classes I felt like dressing-up.

Along with some dark grey tights and red Mary Janes flats.

I had recently gotten a ton of basil.

So I decided to make a pesto. Rather than using raw pine nuts I toasted them first and it really made a difference in the flavor.

Afternoon snack

These are the Apple Grahams that came in the package Holly sent me. I’ve tried them plain, with the medley jam she also sent me, pumpkin butter, dipped in Sugar Cookie tea, and pumpkin spice soymilk. I have yet to crumble them on a nice warm bowl of oatmeal.

Almost forgot about lunch!

For lunch I tried another Gardein product. This time it was the chick’n scallopini. I really liked how they lightly-seasoned these, and they were also a really nice size. There are some vegetarian products out there that give such small portions and that can be frustrating. I decided to cook up the rest of cauliflower and chick’n scallopini in a Sweet Pepper and Coconut cooking sauce. Served with Nishiki rice. So good that even my little Moofia toy wanted some.

I recently picked up a new item at the grocery store.

What could it be? A rutabaga! I’m pretty sure I’ve never tried one before. My darling darling, Brooke, said this was one veggie I needed to try. She recommended to try them with cranberries, so of course I listened! I roasted the rutabaga and an apple with sugar, salt, and pumpkin pie spice. I also had a Tofurky Kielbasa decorated with ketchup, beer-brewed mustard, and a bit of sweet relish. Yum! I definitely was looking up more rutabaga recipes after this.

This was a special bowl of oatmeal...

In Brooke’s survey one of the questions was, “bowl of hot cereal you have been wanting to try.” And I answered a banana rum cake-inspired oatmeal. Lynn thought it sounded good too, so I decided to make it! I made my way to the liquor store and got a miniature bottle of Captain Morgan’s spiced rum. I did not prepare my oatmeal as I usually do because I additionally cooked it with a couple spoonfuls of spiced rum and a bruleed banana. I topped it with a sliced banana, some pecans, New Morning Honey Grahams, and a ZenSoy banana pudding cup.

I even mixed spiced rum in the banana pudding!

I wanted to be drunk for my Taoism class! Kidding of course!

I hadn't worn this blazer in ages!

Lunch was surprisingly yummy.

I wanted to try out something different for the wee bit of kale I had left. It was just enough to help make this sandwich (I just boiled it). I assembled the sandwich with French Meadow Bakery’s gluten-free sandwich bread, cashew butter, kale, and pumpkin butter. This was a new combination I thought of and wanted to try out; I think some onion jam would’ve definitely sealed the deal, but this was delicious as well. I had some of the leftover hummus from Brittany’s sandwich recipe – perfect for the broccoli!

Bright and early on a Saturday!

Since I have to wake up really early on a Saturday morning (and I hadn’t gotten home on Friday till 4:30 am), I just want as much sleep as I can get. So when I woke up I quickly put my breakfast together. I tried another 18 Rabbits flavor that was sent to me; that morning I decided to try the “Nibble a Sultana” bar. I had it with a container of vanilla Greek yogurt, a diced apple, and cinnamon. I’ve seen sultanas baked with apples in little tarts. This bar didn’t have that same perfect granola-y flavor the other one had. It was okay, but I probably wouldn’t buy it for myself.

Carrots and rutabaga mash + sandwich

With the rest of my rutabaga I followed Brooke’s advice again and made a mash out of it! I stumbled upon this recipe and I knew it would be nothing short of delicious. However, I ended up sprinkling on some pumpkin pie spice and mixed some coconut oil in as well. This had me licking my bowl clean. The sandwich was inspired by a local coffee-shop item on their menu. It had my homemade basil pesto, Gardein chick’n scallopini, roasted red peppers, and goat cheese. Wow! Do any of you ever recreate restaurant recipes?

I just had to!

After going on a long walk excursion with a friend I came home to work on my project.

And I got kind of side-tracked...

Okay, really side-tracked!

Then I finally got back to work.

Then, next thing you know dinnertime rolled around! I had become so focused that I had totally lost track of time.

I made sweet and sour lentils and had it with leftover Nishiki rice and coconut oil.

Korean-Russian Carrot Salad

I’ve had this recipe saved for a really long time and totally forgot about it! This tasted very different from what I usually eat, sweet and spicy, but it was a very pleasant change.

Later that night I ended up going to some of my friends’ art exhibit and met up with another friend. Afterwards we went to a birthday celebration and eventually I came back home and I woke up with two thoughts on my mind. “I have on last night’s makeup” and “April’s pumpkin French toast sticks.”

April’s recipe also calls for a peanut butter frosting. I changed it around a bit and made it vegan by omitting the eggs, and used Pumpkin Spice soymilk (highly recommended!!!) and a thickening agent. I used two thick slices of Rudi’s 100% Whole Wheat bread. The toppings include: diced apple, more pumpkin pie spice, and some Apple & Maple syrup. This breakfast was such a great way to start a beautiful day.
