Build Me Up Butternut

The other day I received a package with no return address and a secret admirer was the sender.

My heart leapt with joy because I knew it had finally arrived! My friend–whom I stayed with when I was in New York–had sent me a package awhile ago. I knew it was from her when I read that it was to her chickpea; she’s deathly allergic to them so it was a joke. Isn’t that unfortunate though? To be allergic to chickpeas… Oi!

There was a surprise beneath every layer.

A canister of delicious chai tea and handmade stationary!

I am seriously blessed to be surrounded by such wonderful people. Really and truly, every day I am given so many reasons to smile. From random bump-ins on the street, to constant messages from dear friends, and to comments I get from you all. Speaking of comments, my mom finally left her first reply in my last post! Whenever I’m in Florida we sit around the kitchen table and I’ll read my posts out loud to them. This blog makes them smile 🙂

It just so happened that before I opened the package I turned on the burner to heat some water for a cup of tea.

The chai tea was delicious and flavorful with all its spices. I had it with a warm lemon poppyseed Heart Thrive + coconut oil. After the picture was snapped I decided to spread on some cranberry preserves as well. This is the best way I’ve enjoyed this flavor of Heart Thrive. For some reason, it just tasted better this time around.

Dinner was something I was very much looking forward to... more so than usual.

Not too long ago while blogreading I checked up to see if the lovely Angharad was still alive and kickin’. Indeed she was because I saw a new recipe that I knew I had to recreate! Ladies and gentlemen, introducing the spicy black bean burger. This sounded like an amazing recipe to make on a Sunday night, since it’d be convenient to have these available on busy days. That night I had it in a handmade flour tortilla with bell peppers, homemade salsa verde, cilantro, and since I had no sour cream on hand I just used Greek yogurt. This was actually a surprisingly good substitute since the yogurt is thick and tart. As the patties were baking, my roommate and her boyfriend exclaimed how good it smelled. Well now I can say that they taste even better than they smell! Though the truth is, I don’t think Angharad could ever give us a bad recipe even if she tried.

A new twist on my favorite snack as of late.

Instead of using granola I nuked a crumbled lemon poppyseed Heart Thrive in the microwave with some soymilk till it got nice and soft. Then I added white chocolate chips and cashew butter. I am so glad I opened up this glorious bag of white chocolate chips!

Another surprise in the mail from a very dear friend of mine.

I’ve heard so many praises about this cookbook and now I know why!!! There are so many incredible sounding recipes, where’s a girl to start?! Thanks so much Liz! The ideal situation would be to invite every single one of you over and we’d all choose a bunch of recipes, then hunt and gather, and prepare and enjoy a most glorious feast. Imagine that? Being surrounded by that many awesome people and amazing food.

Breakfast on my critique day.

After having my critique (my piece was the only left to be critiqued) postponed three times–I was ready to get it over with! But I knew I had to start the day on a delicious note and the rest would fall into place. I had a bowl of yogurt, mango bits, pomegranate arils, a warm apricot Heart Thrive + coconut oil, and Sunland’s banana peanut butter.

Yeah, I think a yogurt mess was a great decision!

Oh and the crit went really well!!! It’s always nice to hear other perspectives and suggestions. The class actually answered one of my doubts of whether or not I should’ve made the video longer–they wished it was!

I cut a butternut squash and I left for five minutes and look what happened! Whoa!

More randomness!

I had to have another  spicy black bean burgers! This time I filled the handmade tortilla with butternut squash, avocado, cilantro, manchego cheese, tomato sauce, and red pepper jelly. Can I get a witness?? This was so pleasing to every kind of taste; sweet, savoury, spicy, tangy, straight up delicious.

Tart fro-yo + One Lucky Duck's raw blonde macaroon = A delicious new take on Sweet-tart!

Couldn't get enough of the butternut!

When I was looking for falafel recipes I stumbled upon a few sweet potato ones. So this led me to making a falafel wrap with butternut squash, cucumber slices, tomato slices, avocado, cilantro, fresh tzatziki, onions, and lettuce. Yum yum yum and more yum!

A very productive study date!

Leftover yogurt pancakes

One of them was a banana pancake and I chopped some dark chocolate on top. Coconut oil, cinnamon, and Apple & Maple syrup was spread on all the pancakes. The other two pancakes were topped with diced apples and confectioner’s sugar mixed with nutmeg. On the side I also made a dip for the apples; a mixture of Sunland’s banana peanut butter and yogurt. I’ve seen this done on some blogs so I thought I’d give it a try–and I shall try, try again. This was good!

Sometimes I like to get up close but never too personal.

Speaking of chocolate, this is what the fig, fennel, and almond dark chocolate bar looks like.

Tried something totally new...

I have never had buffalo wings in my life so when I saw that I had one more Gardein freebie coupon left, I thought I’d give their vegan “buffalo wings” a chance. But I had no idea what they were usually served with. After “researching” it I decided to transform my tzatziki sauce into a ranch dressing by adding some extra ingredients. I also made some Old Bay season yam fries; and steamed some kale, seasoned it, massaged it in olive oil, and topped with avocado slices. Spicy!!! I can’t tell you if these were authentic tasting or not, but I can tell you that I liked them! The texture wasn’t too funky (+ no bones!) and you could taste the vinegar in the sauce, which I didn’t mind. Actually, after looking up some buffalo wings recipes, vinegar is a common ingredient.

Crumbled granola nuggets + soymilk + Cacao Bliss; warmed up in the microwave.

Whenever I pull out my personal casserole dish I swear the stars instantly align!

In the dish: roasted butternut squash and yam (tossed in coconut oil and cinnamon) + avocado + kale + homemade falafel balls + tzatziki mixed with tamarind-date chutney + cilantro. Random and flavorful. I love the sweet and spicy combo of the tamarind-date chutney; it brought the tzatziki to whole other level.

After my last post, the rest of the week seemed to fly by. Something or someone out there is listening! It’s Friday and I have no idea what my weekend plans are. My choices are: go up to Charlottesville or stay snowed in the comfort of my own home. We’ll see, we’ll see. Now if only I could stock up on this no matter how my weekend pans out…

I know a few all of you will appreciate this!

Matilda and I wish you a joyous weekend!

Winter Days

Many of you asked me about the brown rice cream in my last post. The company Erewhon makes it and you can order it online or check to see if it’s at your local grocer. It’s a really great 100% organic creamy cereal that’s a bit heartier than cream of wheat and is also gluten-free.

On the topic of answering questions, if anybody has any others for me regarding anything, don’t be afraid to ask! I’d be more than happy to answer.

The heavenly smell of the caramelized banana was wafting through my apartment.

This bowl = Oikos yogurt + Udi’s Hawaiian granola + caramelized banana + Sunland’s banana peanu butter. Let me remind you what’s in the Hawaiian granola (which is my favorite by the way)… ginger-toasted macadamias, pineapple, and coconut. I also did something special to the yogurt–sweetened it and also added a bit of coconut extract to give it an extra tropical flair. Yuuuuum!

I quickly put together this lunch before my Literary Journalists class.

The rest of the Health Valley vegetarian chili mixed in with bulgur wheat, hickory smoke sauce, corn, and mushrooms. I also had a side of steamed kale tossed in olive oil.

Something new to try...

Remember when I found the new caramel Oikos flavor in my last post? My first thought when I saw it I was disappointed because it looked like the plain yogurt. But then it occurred to me that it was probably at the bottom of the cup. Correct-o-mundo! First I tried it alone and I have to recommend this to everyone! There was nothing weird or funky about this. The caramel and the Greek yogurt blended together smoothly and tasted so yummy together. It’s sweet indeed, but it didn’t have an artificial taste.

Then it hit me--combine a diced jazz apple with the caramel Oikos...

And another idea hit me!

I wanted nuts but also something crunchier. Solution? Top it all off with vanilla & almond granola. Caramel apple much? This was refreshing and full of flavor!

For my to-go dinner I used a Sabra to-go cup and mixed in some pesto and cumin.

Thanks to my friend for giving me these Sabra to-go cups--mixed in some pesto and cumin.

Trader Joe's handmade flour tortilla + pesto & hummus + veggies + cilantro

I had to go to photoshoot that night for a Valentine’s Day ad for a hip restaurant around here. I’ll let you guys know when the pictures come out! It was very different to be the one in front of the lens, but so much fun!

The other day when I saw hot cocoa in Holly's post I made some that night and I stumbled upon something I miraculously forgot!

Maya’s homemade marshmallows she sent me awhile back! How did I forget I still had some left? Well I knew just what I wanted to use them for. I already knew they were delicious alone and with hot cocoa, so I wanted to incorporate them into my favorite meal of the day. I made a bowl of oatmeal with chocolate protein powder, hot cocoa mix, coconut oil, and topped them with the lovely marshmallows. On the side I also had a sliced apple with Sunland’s caramel peanut butter.

They started to melt right in!

I made a tzatziki sauce with of Oikos plain Greek yogurt + other various ingredients.

The recipe can be found here! I also added in a bit more garlic because I’m a lover.

Such a refreshing lunch... in the middle of winter!

I made a falafel wrap and a salad on the side–both topped with fresh and creamy tzatziki. The falafels I made the other day were definitely winners!

So. Good. I literally stopped everything to just sit and enjoy every bite of this wrap.

More snacking on the go!

I got back in touch with autumnal flavors with the Maple Pecan Boomi Bar. I was asked to go shopping with a guy friend of mine. He said he needed a lady’s expertise to find the right button-down shirt. Too funny!

Strike a pose!

And then I was asked if I could be treated to coffee. Yes please!

We both ordered soy cappuccinos and I dusted mine with the dolce spice. Not sure what it is, but it sure smelled good!

I love foam!

After finding the perfect button-down and some other things we headed back home, but he had to make a quick stop at Trader Joe’s. What?! I got to go twice in one week! One of the cashiers swore he saw me riding my bike on a road I know I probably wasn’t cruising down recently. I’ve been told many times that I have a doppleganger walking around. Hmm?

I woke up to this today!

Matilda had on three layers for her morning walk.

Check out my super stylin' babe!

Blinded by the light!

A whole new world.

She kind of looks like a little old man hehe.

Matilda is so tiny!

At some point Matilda let us know that walking time was over so I picked her up and ran back home to warm my poor baby up.

Then I started to prepare a hearty meal for us--perfect for a snow day.

Such a comforting meal.

I just started to cook things that I felt would be delicious together. I cooked some bulgur wheat. Then sauteed onions and garlic with curry and cumin. Then I added the water and red lentils, bay leaves, diced tomatoes, green peas, hickory smoke, vegan Worcestershire, and red miso paste. After it was all done simmering I mixed the bulgur wheat, lentils, and swirled in some coconut oil for the final touch.

Here is some exciting news that I have to share with you all. Remember in my last post I talked about being very busy but enjoying what I’m doing and trying new things? Well recently I went to a model call for a local boutique around here. They’re hosting a fashion show featuring local talents and what not. I decided to give it a try and people of all sizes could come! I seriously thought I wouldn’t get a call back because I was lacking that “model attitude” when I did my walk, but maybe they saw something in me because I got a call back and I’m in!

I hope all of you are enjoying your weekends whether you’re snowed in, bundled up, or soaking up the sun even! Tonight I plan on going bar “crawling” through the snow with some friends. Should be fun!

What I Get Out of Cooking

The obvious is that I get to taste delicious food, but cooking means more to me than that. It has become something therapeutic for me and draws out many metaphors about life. I cook with spices and seasonings and I think about the different flavors that foods offer. Much like my motto for life: it shouldn’t be bland! Moreover, cooking is time I take out of my day for me – to do something I want and like to do. I think it’s important for people to incorporate “me time” in to their daily lives. You are wonderful, so why not? Cooking also has it’s financial advantages, but that’s not really my motivator. While grinding mustard seeds to a powder I started thinking. I realized that cooking has helped me get this sense of independence. Knowing that I am able to make so many things by myself and constantly learning new things is precious to me. Making things out of scratch – “hey I made that!” It’s the simple satisfaction I get after I put the fork and knife down when I’m done eating a delectable meal.

So let’s the put the fork and knife down and look at some things I’ve recently put together.

That's a wrap! Not really because we're just getting started.

I stuffed it with a readymade chickpea dish from the Indian store and my leftover spiced parsnip and carrot puree + coconut oil.

Nighttime = snacktime

I noticed a pear in the fruit basket that was definitely ready to be eaten. I decided to make a pear sauce with cinnamon, amaretto, and sugar. I crumbled some honey grahams on top and warmed it up. Then I remembered Jessica’s favorite nighttime snack and I put white chocolate chips on for the final touch. I love using amaretto to make sweet things!

My breakfast is smiling at you!

And I definitely smiled back! I spread Sunland banana peanut butter on one slice of my English muffin and dark chocolate peanut butter on the other. Oh my goodness I absolutely loved the banana peanut butter. It was such a wonderful sweet spread. The dark chocolate one was good but not quite what I expected. I couldn’t really taste the peanuts in it – it reminded me of Nutella actually. Which is fine by me! If you go to Sunland’s website you can see all the other peanut butters they have. There are so many intriguing flavors like sweet molasses, Thai ginger and red pepper, vanilla cranberry, and onion parsley!

Top with banana slices, naturally!

Cookbook review!

Awhile ago I had a cookbook by Chef Tal Ronnen sent to me. Actually, one of my Thanksgiving recipes is one of Chef Tal’s creations (not from the book though). Anyway, this book is bursting with colorful, fresh dishes and all of it is vegan. I loved reading all the stories, tips, recipes, and they even have an upscale vegan restaurant guide. One of the restaurants happens to be in my very backyard (and they serve incredibly delicious food). Anyway, this book also includes a cashew cream that is used in a lot of recipes. I loved seeing how versatile certain foods can be and how creative one can get with cooking. One thing that stuck out to me the most was in the foreword: “When I crossed over to vegetarianism as a teenager, I didn’t abandon my taste buds. I took them with me. In fact, I took them further.” That’s exactly how I feel! Even if you’re not vegan, I’m sure these recipes will get your mouth-watering with the pictures alone. In fact, both my parents browsed through the cookbook and constantly oohed and aahed.

The first recipe I tried from the book...

This was my first time using daikon radish - it's much milder than the Cherry Belle radish.

Vietnamese-style tofu hero and Asian slaw

It's time for your close-up!

This was so good (loved the Asian slaw) and tasted very different from what I usually have. Actually, I don’t think I’ve ever tried Vietnamese food. I believe this counts as a food adventure!

Next up...

I got some sweet basil from our backyard.

We also have Thai basil!

Heirloom tomatoes are so beautiful.

They remind me of watercolors.

Voila!

Oh my goodness! Crisping capers in olive oil is amazing. I highly recommend doing this! They gave this simple dish a satisfying salty and delicious crunch!

A great and colorful dinner in my book!

Later on I made a smoothie.

One of my friends from Brazil said that she never understood why people put avocados in salads because in Brazil they eat the avocado as a fruit – with sugar or in a smoothie! Technically it is a fruit! It’s also nicknamed a butter pear – so fitting! I found this so intriguing and I immediately started to concoct smoothie recipes in my head. So in this smoothie I blended together some ice cubes, 2 cups vanilla soy milk, a large banana, half an avocado, and 2 large dates. I usually never measure things out (except when I bake) but with smoothies I find it helpful to measure out the liquid part. This was enough for 3-4 servings. You must try this! It’s so easy and so delicious.

I'm becoming a granola girl!

The folks over at Udi’s Granola sent me an incredible package of their granolas to try out. Every flavor sounds delicious and today I opened the Vanilla granola. I had it with raspberries, Bekah’s “scented” almonds, vanilla yogurt, and crumbled Newman’s Own Organics chocolate chocolate chip cookies. I approve! This granola was like it was just made! No chunks because once their granola is done baking they massage it by hand to break it up. Moreover, they also hand-mix in the dried fruit if the recipe calls for it. Check out more of their flavors here! Which flavor should I try out next? I can’t decide!

Anywho, you know what’s funny? Remember over the summer I was on a mission to find the elusive kabocha? I checked everywhere and I finally found one at an out-of-the-way Asian market. Now the other day I went to Whole Foods and what did I see? About 20 kabochas right in front of my face. Either they’ve been reading blogs or it’s just a happy coincidence! I hope you all have a fantastic Thursday. Before you know it the weekend will be right at your doorstep!

p.s. If that wasn’t enough eye candy for you, here are some more pictures from Art Basel.

Go baby go!

Variety’s the Very Spice of Life

It’s almost the end of the work week!!! What better way to start this post, than with one of my favorite posts this week. One of my favorite bloggers, Nicole (hey girl hey!) wrote a post that brought a smile to my face and reminded me how wonderful family can be; and being with them can bring such happiness. Check it out!

What I wore on my traveling day!

Not enough room to pack in my bag -this is what I wore on my traveling day!

This isn't good-bye, just see you later.

This isn't good-bye, just see you later.

I left Matilda with the only person I would trust besides my family. Actually, I trust her because she is like family! I miss Matilda so much. I keep thinking I hear her little paws clicking on the marble floor.

Twas a rainy day

Twas a rainy day

The first part of my flight was delayed so when we landed I had less than 15 minutes to run across the airport at Detroit to make it to my connecting flight. By the time I got to the gate they were already boarding. But I made it!

I took some pictures of some interesting things my parents have.

Check it out peeps!

Check it out peeps!

Fufu flour aka plaintain flour, Kefir made from goat’s milk, Dr. Kracker crackers, German bread (NEELA!), pomegranate seeds, and tamarind.

They actually have Sabra!

They actually have Sabra! So smooth!

My parents have good taste. But I am kind of surprised that the only nuts in the house were macadamias! I think this is because my mom can’t really eat nuts anymore since she got braces. After my dad got back from his long walk, we made breakfast together.

A papaya cut just in time; perfect!

On the side is some cottage cheese and fruits.

Cottage cheese in my oats!

Cottage cheese in my oats!

I thought this was the perfect opportunity to try a style of oats I see on April’s blog. Afterall, this lady definitely knows what’s up! My mom just followed me as if it was a rule. She’s so cute! I think she thinks I’m Queen of Oats or something. If she saw what all you other talented folks create, her mind would be blown.

For lunch I made a wrap and stir-fry

For lunch I made a wrap and stir-fry.

I swear my parents have been reading food blogs. These wraps were the Flat-Out ones I see frequently around the blogosphere. Inside my wrap? Sabra hummus of course! Also some organic girl baby spinach, tomato, and the best medium cheddar I’ve ever tasted.

I also made a wrap for my dad.

I also made a wrap for my dad.

When I first tasted the medium cheddar I exclaimed how good it was. Then he remarked that he thought it would taste good with apples. I agreed! So I made him a wrap with melted medium cheddar, cooked onion, and apple. I actually ended up taking the first bite. My excuse? I’m the king’s taste tester… you know… just in case someone tries to poison him?

Post Office adventure!

Post Office adventure!

Afterwards we headed to the dry cleaners, then on to more important matters. I finally got to submitting two of my videos to a film festival up in Seattle. Fingers crossed!!! Then we went to the mall and I got some new sneakers. My mom also took me to this new lingerie boutique she went to the other day. They had so many pretty things! It reminded me of this Japanese intimacy boutique I went to the last time I was in New York. They had cute Betsey Johnson sets and Chantelle bralettes.

Dinner time rolled around…

Variety = lots of color!

Variety = lots of color!

Mexican!

Mexican!

I am totally taking advantage of the .79 cent avocados while I’m down here! I just cooked the vegetables in olive oil, salt, and squirts of lime juice. The beans were cooked with cumin and turmeric. All together? Tortilla, veggies, beans, Queso Fresco, corn and bean salsa + AVOCADO!

On the way home from the airport last night my mom told me that she shared my blog with some of her friends and co-workers and they were amazed. They told my mom that I should open up some kind of something! One of her friends actually suggested something that I can seriously consider in my near future – hosting “how-to” cooking clinics. Wouldn’t that be fun? Does anybody have any advice on this?

Hope you enjoy your day tomorrow. Heck it's Friday - do I even need to hope?

Change of Pace

I’m going to rewind on my eats a bit because I’ve been skipping around. Remember that pumpkin & lentil curry me and my friend made?

This is what I did with my leftovers.
This is what I did with my leftovers.

Since it was pretty thick it made a good filler for a wrap. The curry was just re-heated with some coconut oil and I also grilled an apple with cinnamon, then spread on some Crofter’s superfruit spread (pomegranates and black currants blended with red grapes and morello cherries).

Cran-Lemon Twister
Cran-Lemon Twister

Well, this was the last ProBar out of my sampler package. I have to say, I was not disappointed with these bars. The first bite I took out of this one I literally made the “mmm” noise. It definitely has a zing and gave my tastebuds a little twist they’re not use to. Some of the ingredients in this bar are cranberries, lemon, papaya, and pineapple. There are so many other ProBar flavors I didn’t get to try, and I really want to. I guess I will be starting a new collection?

Dun dun dun... the mandolin slicer.
Dun dun dun… the mandolin slicer.

I bought a butternut squash not too long ago, and I knew exactly what things I wanted to make with it!

Butternut squash fries!
Butternut squash fries!

I seasoned them with salt and some Old Bay. On the side I followed Happy Herbivore‘s spicy chickpea spread recipe. You must try this! It is incredibly easy to make, requires no cookibng, and is great as a sandwich filler, dip, or even alone. In the very back is the famous potato salad from Mrs. Marshall’s Carytown Cafe.

I mixed in some vegan mayo and ketchup to make it more like a "fries" dip.

Butternut squash mash
Butternut squash mash

I was reading Lauren‘s blog one day and saw that she made butternut squash mash, and it just sounded so good! I mixed in some coconut oil, vanilla, sugar, and I topped it off with coconut shreds. I had to wait for it to cool down – this was steaming hot!

More butternut squash fries!

I baked these with freshly grated parmesan then I grated some more on afterwards. I served it with my last ooey-gooey arepa con choclo (sweet corn cake with farmer’s cheese). But I plan on re-stocking while I’m in Florida. There’s a Colombian cafe that makes delicious arepas. But my dad said they changed the cook so they’re a bit different now. We’ll see.

Pumpkin penne
Pumpkin penne with homemade pumpkin puree

I have no idea how I stumbled upon this recipe, but I’m glad I did. I didn’t have sour cream so I used cream cheese instead. Logical substitute, right?I got to try out another Tofurky product – the Italian sausages. I really like the seasonings they used for these sausages! I’m also glad there is a vegetarian version of these out there because I feel like this recipe would be incomplete without that ingredient. Delicious and easy!

Just like Mitri, I will continue to eat my orange foods to maintain my olive complexion! I have another fall colored dish for you. I’m so use to seeing green in my vegetable portions!

Mmm chickpeas!
Root vegetables and chickpeas

I followed a recipe sent to me through the Kardea newsletter. This is just something I made a big batch out of convenience. I plan on serving it with rosemary infused white rice. For a more rustic dish you could serve it with wild rice, or any other grain your prefer. I bet even roasting some potatoes and almonds in this would be delicious as well.

Matilda also got a special somethin' somethin' from Trader Joe's!

Hmm… what to do with my strawberry Chobani?

Breakfast the other day...
Breakfast the other day was like a banana split!

I heated up a Vitalicious brownie, sliced a banana, sprinkled on some cashews and sprinkles of course! Topped it off with a scoop of fro-yo. On the side I had some cranberry cinnamon swirl toast with cream cheese and 1/2 with Crofter’s superfruit spread and the other 1/2 with Creme of Almond & Dates.

Holly, look it’s a yog-mess!

Today I fly to Florida! Actually, the other night when I double-checked my itenerary I realized that there was a very big mistake. My dad had booked my flight as if I were departing from Florida tomorrow and flying back there on Sunday. Oops dad! You mixed them up. He was able to work it out I guess. Anywho, I’m so excited!

Putting it Out into the Universe

First thing’s first, my girl Nicole wrote up a super sweet award post about some very awesome bloggers out there. I was so happy and honored that she actually put me in the rankings! I definitely told my mom about it when I talked to her later that night. It really means a lot to me and like I said, Nicole I am so glad that we are friends. Big hugs to you!

This past Tuesday I ran some quick errands and I made a quick stop at Mrs. Marshall’s Carytown Cafe for their famous potato salad! The owner of the cafe, Frances Daniel, appeared on Bobby Flay’s throwdown not too long ago! The woman told me that it was a complete surprise to her. I guess the people on the show don’t disclose it to you until you’ve arrived; Frances thought she would just be a part of the regular audience.

Squirting on some of their secret recipe I presume.

Yum! I don't know what's in it, but it's got a hint of creamy sweetness - so good!

Incredible! I don't know what's in it, but it's got a hint of creamy sweetness, and it may be better than my old babysitter's recipe from when I lived in Germany.

Have you hugged a carb today?

Ohh I busted out a special plate!

Ohh I busted out a special plate!

One side has the rotkohl I cooked with apples and raisins as well, and in the potato salad I mixed in a Tofurky kielbasa sausage. I told you guys I would! I actually read their serving suggestions and I got 2 out 4 covered in one meal. Hmm.. let’s see how else I ate the Tofurky kielbasa.

Cranberry raisin swirl bread just seemed right for this sandwich. Inside is the Tofurky kielbasa, romaine, onion, relish, mustard, and horseradish hummus. M’mm good.

I also incorporated the Tofurky kielbasa into a wrap! In this one I spread on some roasted red-pepper hummus, red onion, relish, romaine, the “kielbasa”, and some dried cranberries. It’s bothering me that I’m forgetting something else I put in there! Bottom point – this was also delish! Any suggestions on which Tofurky product I should try next, since they generously sent me some freebie coupons so I could do a review. By the way, I really recommend trying these sausages out! They’re so much heartier and flavorful than any other “veggiedog” I’ve tried.

Anyway, the other day I went to the bookstore and I was copying down recipes from this one book. Then I realized I was copying down so many of them. That’s about the time I decided that I just needed to buy the book!

The Accidental Vegetarian

"The Accidental Vegetarian" by Simon Rimmer

The cover reminded me of something I made a very long time ago with Haloumi cheese.

Tagline: The cheese that doesn't melt, but grills!

I remember there being a tagline on the packaging, "the cheese that doesn't melt, but grills"

Soon this table set-up will be making its appearance on my blog again in T-minus 5 days! I told my mom about all the interesting and super creative recipes this cookbook has; she made sure to tell me to bring it down to Florida when I visit. Actually, it was more of an order. I think someone’s a little excited about my cooking, don’t you think?

It has recipes like Sweet Potato and Pineapple Sandwich.

It has recipes like Sweet Potato and Pineapple Sandwich.

You should look up his recipes on www.bbc.co.uk. Simon Rimmer has a restaurant in Manchester; so if I’m ever in the area… I am – no questions asked – going! And I’m bringing my book too so he can sign it.

The Accidental Vegetarian will kill the Jentil and sandal Image of vegetarianism forever!”

Later that day I had my friend Emily over for dinner before we went to the capoeira class. The class doesn’t start till 9 pm so we had plenty of time. We couldn’t decide on what to make, then I started thinking about what ingredients I had on hand. While I was walking Matilda I checked on my iPhone if there were any recipes that had the combination of pumpkin and red lentils. Indeed there was! So we decided on a vegan pumpkin and lentil curry recipe.

Almost all the ingredients.

We talked about scary encounters we’ve had. I always love hearing people’s personal experiences with things of that nature. Sometimes it’ll make my eyes watery because I get kind of scared, but I love it! Ohhh the stories I could share! Maybe one day I’ll tell one of mine. That would be a fun idea actually… when Halloween gets nearer. I’ll make it worthwhile don’t worry! Speaking of Halloween, does anyone have any costume suggestions? I was thinking I’d be the Goblin King from Labyrinth. Last year I was “everyone you’ve ever known,” but people thought I was the princess from The Neverending Story.

I made the little headpiece in the back, and I randomly found the petticoat in some vintage thriftstore.

I made the little headpiece in the back out of mirror shards (ouch?), and I randomly found the petticoat in a vintage/thrift store.

I remember as I was making the headpiece and breaking the little mirrors I kept thinking, “I’m going to have such bad luck now.”

On another note, my roommate has this thing shes does that she calls “putting it out into the universe.” Whatever she wants she just says it out loud. I think that act of getting it out of your head and saying those words brings you one step closer to making it a reality. So what am I going to put out into the universe? “I will book my flight to Europe before the month of October ends.” What do you want to put out into the universe?

Your Imagination, My Dear Fellow, is Worth More Than You Imagine

Hey everyone! Good news on the critique. A friend of mine actually wanted to sit in on my classes critique just to get a feel for them again. He was able to brush up on his analyzing skills. Critiques are always heavy days for me, and I usually end up with a headache. You get to hear so many perspectives, insights, and you just learn so many new things. Another interesting thing you get to observe is the manner in which different people think. It’s funny how we can view the world. Anyway, my video got a lot of discussion – a whole hour! Usually I end up feeling disappointed with critiques because I get nothing from it, or I don’t even realize what happened. But I did a lot of self-discovering and revealing about why and what my short films evoke.

While I was setting up I got to try a flavor of ProBar that’s new to me: Cocoa Pistachio

Oh my gosh; this was so yummy! I’ve really enjoyed the random chocolate chip bits in the ProBars I’ve tried. Pistachios are also one of my favorite nuts, so my expectations were pretty high – and met! It’s a mix of pistachios, peanuts, dark chocolate chips, and sunflower seeds. This bar + a cup of soymilk and an apple successfully kept my my hunger at bay for about 3 hours. But I think my body works like clockwork. My hunger usually chimes in before 3 hours or right on the dot – it’s funny. I agree with Holly though, what’s up with it just being half the size of the wrapper? Want to know some information on this bar?

Gourmet meal replacement

Unique taste of pistachios with chocolate is irresistible

Balanced blend of carbs, good fats and protein

Certified Organic, 100% Vegan

5 g of fiber and same nutritional benefits as Original Collection

As a college student, bars are such a convenience to me – as with any busy person I can imagine. So far, my experience with ProBars, is that they are very delicious, nutritious, and  satisfying!

After our critique we got a 2 hour break and I made this messy deal…

Roasted eggplant, ricotta, tomato sauce, and basil.

The class met up again after 2 hours and we headed over to one of the school-funded art spaces to see Richard Carlyon’s retrospective. He was a dancer and artist who ended up teaching in the area for about 40 years when he thought he lost his dancer’s body.

The class got out about 30 mins. early so I got a head start on my many errands. I took way longer than expected! I guess that can happen, especially if one of your stops is TJ Maxx. The day really felt like Autumn had arrived, so I made some comfort food, but I wanted to try something I’ve seen around the blogosphere.

Green oats!

Green oats!

I used the Original Amazing Grass Meal packet to turn this bowl of oats green. I also mashed in a banana, NuNaturals liquid vanilla, and coconut oil! I feel like everyone’s bowl or cup of something green tastes different so I’m going to spare the details and just say that I was pleasantly surprised! I was contemplating whether or not I should mash the banana in because “what if” it tasted like crap? Then it’s bye bye yummy banana.

I also tried Lindeman's Framboise dark cherry flavor.

I seriously forgot that it was beer and beer makes you drunk; so I got a little buzzed about 10 minutes after hahaha, then I put two and two together. Oh! And I didn’t drink the whole bottle hehe.

Anyway, so far this week it seems a lot easier to breathe. I had a photoshoot with a friend of mine – I haven’t done one of those in a long time! I feel like I need to have a creative outlet with other people so I get more dynamics going on. Sometimes working by myself gets to feel like I’m running in circles.

He has a lot of neat camera equipment.

You can check out his site here. The first picture with the blue velvet pants was from the shoot we did; and you can find a couple more over on this site. It’s so weird for me to be in front of the lens! I really worked on just getting comfortable – so I ended up talking a lot.

Let’s eat now shall we?

I used up the rest of my edamame hummus.

In this wrap is roasted eggplant, sprouts, NatureNaise, grape tomatoes, and red onions. Since I don’t have a grill press I just used a pan and heated up each side. This was so delicious!

Don't let the ordinary looks of this sandwich deceive you...

The other day when I was browsing through pizza recipes that had ricotta cheese, I stumbled upon one called Peach-ricotta pizza. Well I made it in sandwich form, but the secret ingredient is the addition of cilantro. Since I didn’t have fresh cilantro on hand, I just subbed in Trader Joe’s cilantro dressing. Wow! I would have never thought of cilantro, but it took this sandwich to another level. It’s funny how the simple addition of one surprise can change everything; this also applies to other things on a much broader scale.

I feel like I try something new everyday!

Before I forget! I wanted to share an entertaining site I found earlier today. I was looking up ways to prepare a certain squash (you’ll find out next post), and I stumbled upon this little gem: 50 Ways to Eat More Produce. I think these ideas work well for adults and kids alike. So check it out.

p.s. Marina asked if I was studying culinary arts – I wish!!! Another friend of mine actually asked me that same question, and I think it’s a sign that I should look into it – perhaps a summer program? I’m actually majoring in sculpture, so I guess that’s why I’m so visually oriented.

Happy Wednesday everyone!!!

Dog Days of Summer

First and foremost, I’d like to thank you all for the encouragement and insight on my interest in studying abroad. As some of you may know, I am originally from Germany, so studying there would not be a problem. However, I might choose somewhere other than my motherland since I love traveling and getting to know other cultures. What’s more exciting is getting the opportunity to adapt to them! But, Neela, we can still take a train and find an awesome city to conquer together! We’ll have all the men at our feet while we shop, right?

On another note, since I haven’t been posting that often, let’s get down to business folks. Right now I’m sitting at a new coffeeshop that opened up where I live. They’re concept is really neat –

“…offers the best in delicious, organic, fair trade coffee, served up by our excellent baristas, using state-of-the-art equipment. To go with it, we’ve got a fantastic menu, packed with both sweet and savory fare and using the freshest organic ingredients. And while you’re savoring the coffee and the food, we invite you to jump on our free wireless, and to enjoy entertainment, classes and activities.

The coffeeshop is actually an extension of a local healthfood store that really pushes the idea of supporting local farmers and making less of an imprint on our environment, while taking our health into consideration.

Let’s see… where to begin? Oh I know! The first and most important meal of the day. It also happens to be my favorite!

Toast for breakfast!
Toast for breakfast!

I was always jealous of my roommates toast always smelling so good. How come mine didn’t smell so good? I think it’s because I usually have the super grainy kind of bread. The other day when I went to the store, I knew I was running really low on cereal, and I knew yogurt was on sale for $1.88 for 32 oz. Then I spotted the one. Meet my new love, cinnamon raisin swirl toast. Well, not really a new love, just a forgotten one. This morning I smeared some whipped butter on one slice and coconut oil on the other. Then I sprinkled on some extra cinnamon. This time I was the one making the roommates wonder where that heavenly smell was coming from. One of the toasts even got Hello Kitty burnt on it. In the bowl I had plain yogurt, sliced banana, homemade blueberry jam, flaxseed and a crumbled honey graham stick. Thank JB for reminding me of how yummy blueberries and banana are together!

I was also inspired, yet again, by the hilarious Jess! For real girl, keep doing your thang. You’ve got an ability to make people smile and laugh!

A wrap that I would like to say was muy delicioso!
A wrap that I would like to say was muy delicioso!

In the wrap was a random veggieburger, Trader Joe’s corn salsa, mayo, and carrots. On the side I steamed some cauliflower and doused it with nutritional yeast and red pepper flakes. Spicy!

I also munched on this!
I also munched on this!

I discovered something wonderful at the bottom of this bag. Besides some of the sugar granules that managed to sprinkle off the nuts, I found raspberry jelly bits! More PB&A goodness right there.

Mini wraps!
Mini wraps!

I was low on groceries so I checked our freezer and I found some chick’n strips that I think have been forgotten. So here’s what I decided to do… I heated up some wraps on the skillet (notice the burn marks). Then I spread some Triple-Layer hummus, topped it with spinach, chick’n strips cooked in tamarind-date chutney, and smeared some Duke’s mayonnaise all over. I didn’t exactly wrap these babies… I just folded them over and got to work eating. I know mayonnaise makes some people cringe. But there are so many varieties now: cholesterol-free, vegan, light, and even with added omega-3’s! Today I was mulling over a menu and I read “sun-dried tomato mayo”. My food processor and I will soon get to crackin’. Now if I could get my hands on some Delouis.

I found another wonderful item at the local grocery store the other day. I browsed through the bakery items and found just the thing!

I had them slice it for me.
I had them slice it for me.

Once I’m at my new place and I feel more freedom to do things in the kitchen, I’m going to start baking my own bread again. When I first moved into my current place I would bake Irish soda bread weekly. However, I felt like my baking skills were being taken advantage of and I stopped baking things all together. This is why when I go home to Florida you might notice that I take full of advantage of the kitchen and my love for cooking and baking. I’m going to stop thinking of buying good quality items as a splurge. It tastes better and it just makes me feel more content about my meal. Why not make everyday special, you know?

A big salad with baby spinach, Hanover tomatoes (THE BEST), avocado, roasted chickpeas, and a sweet honey dijon dressing.

I roasted the chickpeas in ground cinnamon, powdered onion, honey, and a bit of soy sauce. This smelled so good! Alongside my salad I had some slices of bread with the Three-Layer hummus and a baby slice with avocado!

For dinner I wanted to use the chickpeas for something other than a salad.

I wanted something a bit more filling, but still refreshing.

I steamed some rice with basil. I dumped the rest of my chickpeas in my bowl of rice and mixed in chopped raw carrots and tomatoes. While the rice was still steaming I stirred in the essential coconut oil. Can’t go a day without it! This was exactly what my tummy was hoping for!

I also had a cup of Chinese Green Monkey Tea.

I have some exciting plans coming up next week! Besides my move-in date being tragically postponed till Monday, my friend, Liz, will be arriving on Wednesday. Get ready for some serious adventures you guys. This girl has got spunk, sass, and all that jazz. She’s a New Yorker, what can I say? She’s staying till the 9th and I’ll be heading back up with her. I haven’t decided how long I’ll be staying though. So if you guys have any recommendations of places for me to go to (not limited to foodie things) let me know. Oh! And if anyone wants to go on a date that would be nice too! I like to call them dates because it just makes it sound more exciting hehe.

I want some Lucky Candy! Anyone want a piece?
I want some Lucky Candy! Anyone want a piece?

If you haven’t checked it out yet there’s a very interesting contest going on at the Special K Treatment. Go take a look before it’s too late!

Also, Mia was kind enough to honor me with a blog award. I’ve never received one before so this is definitely something special. And thank you so much! Now I have to fulfill the duty as a lovely blogger and pass it on to other lovely ones.

Oh gosh, do I have to choose? I totally suck at this kind of thing because I love everyone’s blog that I follow, or else why would I be reading it?

Neela, Mitri, Nicole, Kelsey, JB, Cate, Gillian, Katie, Brittany, the Brookes, Jess, K, Janetha, Emily, Jenny, Monica, Lauren, Lynn, and Holly. Okay I went over 15… and I could keep going. You seriously are all so wonderful and I can imagine you guys are just as radiant, if not more, in person as you are in your blogs.

p.s. For all you chia people out there, I stumbled upon this recipe that’s perfect for the summertime.

Chia Fresca

1 glass of lemonade

1 tsp Chia Seeds

1. Combine chia seeds and lemonade. Shake or stir. Allow to sit for 10 minutes until chia seeds swell. Enjoy this delicious and healthy chia fresca.

2. Chia fresca can also be made by soaking the chia seeds for 10 minutes separately in a glass of water. Then combine the chia seed gel with any flavored water or juice for an exciting different flavor of chia fresca.

Bet you didn’t think Chia seeds could be had as a refreshing lemonade, huh?

Take care all and I hope you have a wonderful rest of the week. I’ve got to refill my iced tea and Matilda’s water bowl because it’s just one of those hot summer days!

Say Hello to My Little Friend

Guess what guys? I’m now back in Richmond and typing this post out in my bed in my home away from home. And in 2 weeks I will be moving to a new home away from home. I’m so excited about this! I have been dying inside from excitement for over a month now and I can’t believe it’s really going to happen – so soon!

Before I forget. There’s a song that I insist all of you download. Here’s the link. So just listen and enjoy!

My weekend has been busy busy busy! I wanted to make the most of the time I had left down in Florida. In my last post I mentioned that I met up with my mom for a lunch date. A triple date! But first let’s start with breakfast, shall we?

I woke up not knowing what I wanted to eat. Usually I’m in the mood for something, but today I was just feeling… whatever about it. So I figured, “hey, I’ll just try out another Zoe’s granola.”

Cranberries Currants over yogurt with a sliced banana and almond butter.

If I had more thumbs, I’d be putting them up! As far as granolas go, Zoe Foods can do no wrong!

Then it was time to get ready! I steamed the kabocha and packed some other things. Then I got dressed.

And I was out the door.
And I was out the door.

Oh gosh. I was having a total off day… or maybe it was just those couple of hours. I normally have a good sense of direction, but that day I just kept getting lost. I hate when streets just cut off then start again somewhere totally different. This happens a lot in Boca. Blah! I got really frustrated and my mom decided that I should just stay where I am and she would meet up with me.

Mom saves the day!
Mom saves the day!

Despite the crazy temperatures outside we decided to bear with it and have lunch outdoors.

Mizner Park
Mizner Park

Mizner has this neat ice cream parlor called Sloan’s. The bathroom is transparent until you lock it. Then the windows sort of fog up! I think it makes first timers very hesitant of using the bathroom. And the decor is funky and endearing, I love it. They’ve got a few other shops, and each one is different.

Happy we are finally sitting down for lunch.

I just at the kabocha from the container.
I just ate the kabocha from the container. I even packed some cinnamon hehe.

I tried to pack convenient foods so I opted for crackers (Dr. Krackers cherry semolina – delish!), cheese, avocado, and the star of the hour!

My mom likes using my camera now, so she had to snap a picture while I was serving myself.

Despite us melting from the heat, we were able to enjoy our gumby selves. The hot weather kept the kabocha warm, but I think the sun was microwaving all of us that day.

Walking by stores = Air conditioning!

After our date my mom dropped me off back at my car. Then my sense of direction came back to me and I headed to the mall. I made a couple of purchases, but I’ll share my most adored one with you guys!

Awesome necklace!

I love this necklace! I go through phases with things. For awhile I was going through a belt phase, then a hair accessory one, and you get the picture. The phase I’m going through now is the “statement necklace”  phase. I came home a very happy girl!

For dinner I wanted to make something special – to celebrate my new necklace! Just kidding! But I did make something special.

After our meal we wanted to try out a new tea I found the other day.

Last but not least. My third use for my new friend, Mr. Kabocha. Mister or Misses?

Make this bowl last forever!
Make this bowl last forever!

Into this bowl of creamy oats went some steamed kabocha, frozen bananas, cinnamon, coconut oil, and almond butter. This was a satisfying breakfast for sure! Not just fullness-wise, but my tastebuds can attest to that.

During my last couple of days at my parents place, I milked my time for what it was worth. So remember how I said I was going to stay in Miami after my vacation? I decided not to because I’d rather spend my last week in Florida with my parents. Next time though when it’s not my last week, I hope to stay there. Miami is so much fun! Anyway, my next post will be a recap of my -sniff sniff- final hours. Just thinking about part of it makes me want to dance. I’m even listening to a dance tune right now! But then again, I’ve always got the urge to dance.

I hope you all had an incredible weekend. Don’t let Mondays be the rain on your parade. Take care, all!

p.s. Lauren is hosting a generous giveaway! So I encourage you all to check it out and participate. You could be the winner!
