On Holiday

Hey everyone! I’m currently in New York, and finally finished up this post recapping the rest of my time in Toronto. So keep an eye out for my New York recap as well.

My mom spotted fresh figs at the store, so naturally they accompanied my breakfast the next morning.

Along with the most delicious yogurt ever Liberte’s Plain Organic, multigrain cereal, cinnamon, and almond butter. Unfortunately, I haven’t been able to find that specific yogurt since I’ve been in the states. I’ll try my luck once I get back down to Florida.

We also spotted a bread that’s made without yeast since my mom is trying to figure out the culprit of her stomach upsets.
Topped with vegetable hummus, Laughing Cow, avocado, grape tomato bits, and red onion.

The bread was dry, but nothing unexpected since that is how that bread typically is.

Later on, I went downtown and moseyed around.
I stopped in to get a big cup of tea.
I also went back to the chocolate bar, MoRoCo, with a purpose.

I had never tried a macaron before, but have heard lots about them. The reviews for these were comparing them to the likes of Ladurée and Hermes, which I’ve heard are the best.

The Salted Caramel…
It was quite tasty for the most part, but just a tad bit too sweet for my taste.
I also tried lemon macarons.

I actually enjoyed this one! When I bought the boxed pair I wasn’t too sure about the lemon and my heart was set on trying the salted caramel. Since they didn’t have any of the salted caramel macarons left to buy individually I decided to take a chance and get the last one that was paired with the lemon flavor. The lemon one had a much better consistency than the salted caramel, and had just the right amount of sweetness. Not to mention it brightened up my taste buds with it’s zesty flavor!

Zing!
I always think of macarons as delicate treats.
I also picked up some local sheep’s milk yogurt.

I wasn’t a big fan of it however. It was very pungent, but atleast it was creamy! Did you know that because of it’s molecular composition it is easier to digest, and can even be used as baby formula!

And another local find… strawberries from Ontario!

I find that local produce always tastes better.

Two fruit finds for breakfast: persimmon and strawberries

I was able to make a few outings to the downtown area during my trip, and came across a lot of interesting things.

Check out this work of architectural art at The Royal Ontario Musuem.
After a long day of walking around I picked up some take out at Fresh.

I followed the recommendation from a few of you, and I’m glad I did. Sadly, I couldn’t sit down and eat because I was with my pup, Matilda. But it’s alright because they didn’t make a fuss about having to take my order at the door. In fact, the man who helped me held Matilda for me while I went in to snap some pictures!

Snap snap
The first time I intentionally got take-out for myself in years!

I’m rarely in the mood for take-out, and I usually don’t find the motivation to order take-out. Wait. What? Since when does take-out involve motivation? Well, for me it does. I just have a lot of things that I can put together in a cinch and voila! And if I’m getting food from elsewhere I’d rather just go to the restaurant. So that’s why I rarely order take-out.

My eyes went straight to the quinoa-battered onion rings along with their housemade BBQ sauce.

Oh my word! These were incredible and I didn’t have to try the other onion rings in Toronto to know that these deserve to be dubbed “one of the best”. You get more than the usual satisfying crunch with the quinoa. Then you bite into it you get to the soft onion ring in the middle. The BBQ sauce was the perfect dipping sauce for these, thanks to the waiter’s recommendation! Seriously, I could go on and on about how great these were. If you’re in the area you should definitely stop by and try these.

I ordered their monthly-special salad, which had too many delicious things to remember them all.

The ginger dressing was another welcomed recommendation from the waiter. Let’s see… it had all sorts of sprouts, sweet potato rounds, tofu, all sorts of colorful kale, pumpkin seeds, quinoa, goji berries, broccoli… ohhh so many things to remember!

Matilda and I had quite an adventure that day.
Finally got back to the hotel to enjoy the rest of the salad.
And Matilda got a giant doggie cookie after enduring her first subway ride.
On our last night in Toronto we met up with my mom’s co-workers at a Hungarian restaurant.

The only options I could have were the salads, aside from this creamy mushroom dish with tomato sauce that didn’t sound appetizing to me. I ordered the spinach salad with fresh fruits and an orange-yogurt dressing. It was actually quite tasty! Not very filling, but what did I expect? I had another restaurant picked out for me and my mom to enjoy, but she wanted to meet up with her  co-workers who were already at this place. To be honest, I was upset about not being able to enjoy an actual dinner together, especially on our last night. Oh well. Atleast the company was fun!

So my last night in Toronto entailed a yummy salad and a microwaveable soup.
The next morning involved quick packing.
All the while little Matilda was relaxing on her pillow.

So that was my trip to Toronto! It was very low key, but it was nice to atleast be introduced to Canada. If I go there again I’d like to do things a little different so it’d be easier for me to get to places, so I can experience it more. Ever have a vacation that you’d just want to do over?

I’m extending the Restaurant.com giveaway till next Wednesday. Who in the D.C. area wouldn’t like to get a $25 gift-certificate to any of the restaurants on the D.C. guide list?! What’s better? I’m giving away four. So I’ll repeat the rules:

A Very Happy Belly Helps Make a Very Happy Heart

Greetings everyone! Today is the start of another week, but it’s not just any old Monday. Oh no! Today is the day that voting for Project Food Blog opens. You can check out my profile here, so don’t forget to vote hehe. Also check out all of the other entries as well! I’ve been awaiting this day with much anticipation.

Can't you tell?

A watermelon caught my eye at store, and I had to make sure that I got to have some of this refreshing fruit at least once while the weather is still warm! I’ve also been eating things that are a… “happy medium” between summer and fall. For example…

Baked oatmeal with figs and banana, then topped with almond butter and Coconut Bliss ice cream.

Warm soups like this quick Cuban black bean soup recipe from my "Ayurvedic Cooking for Westerners" book.

I threw in some rice, diced avocado, tomato, and cilantro to make it complete. I love simple recipes that satisfy my taste buds!

A delicious smoothie made without ice, since I'm kind of sensitive about harshly cold things.

Whenever I go out to eat I always ask for water with no ice, please. Anyway, the Chocolate Almond Smoothie recipe from Brendan Brazier’s book, “Thrive: The Vegan Nutrition Guide to Optimal Performance in Sports and Life” (that’s a mouthful) immediately caught my eye the first time I skimmed through the recipes. When making this, I noticed that there was no added sugar. It called for medjool dates though so I was interested in how it would end up tasting. Verdict? I’m definitely going to be making this again!

The other day I met up with some classy ladies at a great local restaurant.

I don’t go out to eat often, but when I do I like to eat very well! And by well I mean incredibly delicious. The last time I went to Cafe Gutenberg was with another friend from New York, and we got to enjoy our breakfasts seated in a comfy nook with pillows overlooking the market. I remember the food being so tasty, and I figured it was time I pay this place another visit. I remember in high school coming here and ordering steamed milk with a shot of mint syrup (TRY IT!). Anyway, the menu makes it hard to choose, boasting things like pumpkin spiced waffles with whipped cream, scramble on a corncake (which I had ordered before, veganized with tofu), sandwiches using artisan rolls, and plenty of delicious cheeses. They also have vegan options for much of the menu as well, such as vegan biscuits and gravy. Can you tell that this place puts thought into their menu?

My dates decided to split some appetizers so they could try different things.

The hand cut frites with fresh herbs, parmesan, and truffle honey.

Sounds good, but I think these fries were actually just herbed and had salt and pepper.

Nonetheless, these were so good!

We all can attest to that!

Beets served with goat cheese, house baguette, and greens.

How beautiful! Two of my favorite things on one plate: beets and goat cheese!

Fondue! Steamed vegetables, house baguette, and Vermont cheddar gravy.

The green onions and wild mushrooms were my favorite things to dip!

I felt like ordering an entree so I got the vegan caesar salad with a house baguette on the side!

I usually don’t order salads when I go out to eat unless I’ve heard great things through the grape vine, or it just sounds too delicious to pass up. Hearing only great things about this salad, I had to try it. Oh my goodness! It’s not the kind of salad that sounds undeniably incredible, but it definitely tasted like one! I never had tofu that was actually so rich in flavor, nor had I ever tried hearts of palms! Maybe the tastiness of the tofu had to do with the fact that it came from the local food commune, Twin Oaks. The lemon-caper dressing was perfect for this as well, especially mixed with the juices that burst out of those little grape tomatoes. The house baguette definitely helped in soaking up every last bit of this wonderful meal. All of us were so glad that we went there to eat, and moseyed on out feeling wonderfully spoiled.

Voting for Project Food Blog goes from 6 AM Pacific Time September 20th through 6 PM Pacific Time September 23rd. So make sure to get your votes in during that time! Once again, click here to check out my profile, and here’s a reminder going back to my last post aka the first challenge. Everyone’s posts for the first challenge are so inspiring, and I wish the best of luck to everyone participating!!!

The Scientist is Back

Hello everyone! I hope you all enjoyed your three-day weekend if you were lucky to have one. I spent most of my extra day off catching up on a lot of reading I had been putting off, but at least I got to read while sitting on a shaded patio at a coffeeshop with my little furry friend.

Hi everybody!

She’s actually passed out right now… as usual.

These make my heart sing just by looking at them.

I saw a recipe for raw energy truffles on Emmie’s blog and I literally got up and made these after reading her post. I used a combination which consisted mostly of cashews, then pecans and pistachios. I also decided to roll only some of them in cocoa powder. I really want to try this recipe using different variations of powders and nuts. Next up on my list is white chocolate + strawberries + cashews. Now that I’m thinking about it… these also remind me of the beautiful babies Katie and many others have been making!

Even though there wasn't a hazelnut in sight, I swear these reminded me of my beloved Ferrero Rocher chocolates.

That’s saying a lot considering Ferrero Rocher chocolates are one of my favorite little confections ever! *This includes the Ferrero Garden variation–I never forget about “coconut” anything. Actually, I just entered their monthly sweepstake for a free case of their chocolates.

I had almost completely forgotten the wonderful invention of wraps!

I stuffed this wrap with some “What Do I Remind You Of” Hummus, fig preserves, spinach, sun-dried tomatoes, walnut dressing, and basil. While making this wrap I asked my roommate if she thought fig preserves would taste good with this. Ladies and gentlemen, at that moment I knew that the scientist was really back! For awhile, I had been putting things together that would obviously taste good together. The point is… I wasn’t sure with this one. Well, I’m glad I just went ahead and tried it! It offered a delicious sweetness that I’d imagine you can find at a meal consisting of tapas–sweetness paired with an ultra-flavorful cured meat. Of course, this is a vegetarian version, and maybe not quite as sophisticated looking. Afterall, the purpose of my making a wrap in the first place was to have something I could eat in class without looking like a slob, or sounding like a goat. How do you all like to get creative?

Somehow the hummus always ends up squeezing its way out of my sandwiches.

Well, what went in this sandwich? “What Do I Remind You Of” Hummus, sun-dried tomatoes, chunky walnut dressing, sweet peppers, and pecorino romano cheese. Now let me talk about the bread. When I saw the loaves of Alvarado Street Bakery Bread at the store, I was curious about why I’ve seen it on blogs… what made it so special? This made a really tasty sandwich bread, and I usually love sprouted breads because of the dense texture, which made this a winner in that category. But it wasn’t so dense that I felt like I had to bust out a toothpick after every bite. The loaf I got, sprouted California style bread, also has a bit of sweetness too. May I recommend spreading tahini + honey on some toasted slices of this bread?

Figs are also something else that just leave me in awe.

The Romans held figs in high regard and planted them in all the lands they conquered, including what are now France and England.” I can see why!

Can turn any bowl of grains into a sophisticated affair served with coconut milk, almond frangipane kream, honey, and cinnamon.

This time I had this sensuous fruit with oats, an apple, plumped golden raisins, walnuts, and cinnamon.

I can’t wait to share my next post with you! Over the Labor Day Weekend I made something that made me truly proud of myself! Here’s a hint: it’s actually something quite simple, but not something people in the western world usually make at home.

Just Checking In

Oh hi, excuse me as I am typing this while I’m underneath a pile of wood, textbooks, novels, and more paper! Remember me? It’s only been a week since my last post but so much has been going on. Lots of getting down and dirty at the studio! I can’t wait to show you all my final piece. My critique is on Monday so it’s coming up soon! I’m actually going to start filming the video piece for my structure tomorrow. Anywho, on with the show!

Thank you all for the compliments on my outfit! A couple of you asked where I got the skirt from, and Holly you guessed it! Anthropologie of course! Am I that predictable? Hehehe. Also the backpack was a gift from my grandparents from a random street market down in Colombia.

A necklace I permanently borrowed from my mom!

This woman she knows actually makes jewelry and this is one of her pieces and there’s a matching bracelet as well. I just realized that in the picture of me dancing below I’m wearing another necklace the woman made. I love how they’re eye-catching but fun at the same time.

Oh! And a little tip for OIAJ: I like to bust out the jar when I have what my eye says is about 2-3 tbl of the nut butter left. I also cook my oats separately and stir it in little by little so the nut butter gets mixed in really well!

I forgot to mention that a couple weekends ago I let my inner dancing queen out and ended up with wet, sweaty shoes!

Now on to some eats from these past couple of weeks. Randomness commence!

Greek yogurt + granola + lots of blueberries + cinnamon + a special nut butter...

Ohhh yes!

While I was visiting my soul sista’, Liz, I saw she had an amazing assortment of nut butters to choose from. Her favorite brand is Futters’, can’t you tell? I loved these so much and she was kind enough to ship them to me! Complete with a super sweet card that’s sitting on my kitchen counter that I see every morning. Having meaningful reminders of my friends (especially the ones that are far away) always comfort me.

Chocolate pecan butter + Greek yogurt + granola + banana slices + dried figs + cinnamon

Figs and chocolate-anything are such a great combination!

Also great on toast!

I like to cut my toast in half so I can try more spreads such as : butter, butter + marmalade, chocolate pecan butter, chocolate pecan butter + Mymoune’s Crème of Dates with Almonds.

Sadly, my coconut butter burned!

Good thing I've got a jar of Cacao Bliss as back up!

Maple-roasted roasted brussels sprouts and shallots with goat cheese

For the brussels sprouts I just sort of followed this recipe.

Since the weather has been sunny I felt like making one of my favorite chickpea recipes!

Mock tuna salad–simple and yummy

More chickpea goodness!

I followed smitten kitchen’s chana masala recipe and served it on top of some basmati rice + coconut oil. I love the fragrance basmati rice gives off when it’s cooking.

I had a frozen chickpea cutlet I made awhile back and it came in handy!

Romaine + chopped yellow onions + tomato slices + my favorite BBQ sauce + Lemony Goddess dressing + goat cheese

This doesn't even look like chickpeas have anything to do with it!

But they most definitely do. I stumbled across a beet hummus recipe not too long ago. I love beets, so naturally I gave this a try. Note: this was so so so good with Dr. Kracker’s apple crisps.

Boy do I have a lot to catch you all up on! Stay tuned for my next post, which will hopefully be sooner than later. Much love to you all.

Another Part of Me

Hello everyone! This is an exciting post for me because I get to introduce you all to a part of my life that is very important to me. As I’ve mentioned in my ‘About Me‘ page, art drives and shapes every aspect of my life. Which is why my plates look the way they do! I can’t help but consider color, placement, things like that. Obsessive? Not to me. I just enjoy making things that are aesthetically pleasing. Anyway, today was my sculpture class’s first critique of the semester. Unfortunately, we ran out of time before we could get to a couple of our pieces – including mine. So, I’ll report back to you all once that’s done.

Critique days are my crazy days. It becomes my one and only real priority, so that means no cooking for me!

Thank goodness for these babies!
Thank goodness for these babies!

The folks at ProBar gave me a nice little package not too long ago. What better time to bust out my first bar on a day where everything is just too cray-cray.

“Apple Cinnamon Crunch is a flavor reminiscent of Mom’s homemade apple pie with just the right combination of sweet apples, nuts, and a dash of cinnamon. This bar is so good it might compliment your next Thanksgiving dinner.”

I was a bit weary of this because I feel dessert-y bars are hard to pull off. So how was my first bite into this dense bar? Delicious! I believe their choices of nuts, dried fruits, and the most wonderful surprise – carob chips – were perfectly combined. This was even better with a pack of soymilk and a couple of peaches. I wish I took a picture of what the bar actually looked like! It had the texture that I love in bars – you could see every ingredient, like whole almonds and sesame seeds. However, I would call it Apple Cinnamon Chew, as it was very chewy. But maybe they thought “crunch” just sounded better. My overall review? If you are considering trying a ProBar, or aren’t sure which flavor to get – try this one!

All their bars are made from whole, organic, raw foods, and 100% vegan.

I also got to try some other new things today. I went to Trader Joe’s and Whole Foods the other day with my dad, since he’s in town, and picked up some new items.

So many bars!

So many bars!

On Katie‘s blog I read that Clif nectar bars were going to be discontinued. I had never tried these bars, but I feel the need to know what these bars taste like. I also picked up 2 others that I’ve seen floating around blogland. I tried the MoJo sweet-n-salty bar as a snack today. Meh, it wasn’t horrible, but I don’t see myself buying it again. Isn’t there a PB&J flavor though? I do want to know how that one tastes.

Peaches born and raised here? Yes ma'am!

Peaches born and raised here? Yes ma'am!

So much to talk about here folks.

So much to talk about here folks.

I picked up some pine nuts because pesto recipes have been dancing around my head. Dried cranberries because summer is officially over (say it isn’t so!). I’m so excited to try these falafel patties – garlic sauce recipe hunt begins after this post. I highly recommend buying Lindemans Framboise beer in any flavor! I’m thinking… Mrs. Marshall’s Carytown Cafe for the best potato salad (no lie) + Kielbasa? Look at those sprouts! There are garbanzo, alfalfa, red lentil, and another sprout I can’t remember!

One old best friend and one new best friend in my life.

One old best friend and one new best friend in my life.

I love 365’s crunchy peanut butter. I should also mention that a jar of this is less than $2! I also bought myself a jar of Trader Joe’s Sunflower Seed Butter. After I tried it at my friend’s house I vowed that I would pick up a jar the next time I would venture out to TJ’s. It’s goodness is overwhelming, and my tastebuds are so happy whenever I eat it. This more than makes up for the other day when I accidentally burned my tongue – sorry tastebuds!

Still pretending it's fresh out of the oven.

Still pretending it's fresh out of the oven.

While I was at Whole Foods, me and my dad smelled some heavenly aroma wafting through the bulk bins. We knew it was coming from the bakery! After we checked out the hot-bar, we moseyed on over to the breads. My dad got straight to the point and said he smelled something spiced and wondered what it was. Well, they told us they just got done baking a loaf of pumpkin bread. They were testing out the recipe = we are the guinea pigs. They wanted us to let them know if it had too much salt, too much sugar, any input we had. Umm… I felt like a horrible critic because my vocabulary failed me while I chewed, smiled with my eyes, and gave them a thumbs up. I saved a portion of the generous slices they gave us…

A nighttime snack!

A nighttime snack!

Mashed kabocha with coconut oil, brown sugar, and cinnamon topped with vanilla fro-yo and the rest of the pumpkin bread. Just a little something to treat myself before the BIG CRIT DAY! Here are some pictures of some of the pieces:

I noticed how cool it looked when she was taking a picture of her piece from that point.

Now it’s time to meet my professor!

IMG_8267IMG_8269IMG_8270This man is incredible! I’m not sure how one human can have so much information coming from so many different places in his head, but he manages. Sometimes when he’s talking he closes his eyes, pauses for literally a good minute, gathers his thoughts, and then decides to say something.

Oh and afterwards we learned what the title of that particular piece was; “The Fucking Part of Life” haha!

Katharina, where are these breakfast pictures you promised in your last post? Alright, alright:

Ricotta, warmed up apple chunks, topped with Zoe's granola.

Beautiful figs on toast

Beautiful figs on toast with cream cheese, honey, and cinnamon.

Lauren, inspired me to pick up some beautiful fruits at the grocery store. She always incorporates a wide variety of fruits in veggies, and I love it!

IMG_8150

This is the first time I blended oats with ricotta; certainly not my last!

Since we’re on the topic of figs, I’m gonna go there!

I got to try something new!

I got to try something new!

I heated up a Chocolate Fig VitaTop and served it with some fresh figs, and a cup of almond milk. The almond milk is in that cute chickadee cup in the back. Back to the muffin tops. I didn’t think the flavor was bad, it was mostly very dry though. With each bite, I kept wishing I had ice cream – something to moisten it a bit. I’m on the fence on whether or not I should recommend this products. I have another one, and I’ll give you another review.

Moving right along… warning, this is a superb bowl of oats. Superb.

Everything looks so pillowy.

Everything looks so pillowy.

What’s that sitting on top? I whirled up a frozen banana, ricotta cheese, vanilla extract, and a bit of stevia. This is much like Gena’s soft-serve, but more volumunious and creamier. It was an incredible way to start the morning with a warm bowl of oats with coconut oil. I suggest crushing some candied walnuts if you really want to take this up a notch.

I licked my blender clean it was so good.

I licked my blender and bowl clean it was so good.

I don’t think anyone figured out what the surprise green mushy stuff I made was. Well, now I will reveal to you all – drum roll please…

Edamame hummus!!!

Edamame hummus!!!

I followed this recipe, and it came out wonderfully. I love the color and the flavor the sesame oil adds to it as well. The first time I saw this was at Trader Joe’s, and I was thinking about how ridiculously simple this must be to make. It is!

Yin and yang

Here are some ways I’ve been eating it:

My lunch looks more like a snack plate.

In a sandwich layered with cream cheese, spinach, red onion, tomato, sprouts, and the edamame hummus.

In a sandwich layered with cream cheese, spinach, red onion, tomato, sprouts, and the edamame hummus.

It would probably be really yummy if I added something smokey to the sandwich, or maybe I’ll test the waters like Mitri and spread a nutbutter on – sunflower seed butter anyone?

What's that?

What's that?

I think Matilda approves.

Although my critique hasn’t happened yet, I’ll show it you all anyway. And let me know what you guys think!

Who am I Becoming

The Art of Savoring

Thank you all for the compliments on my outfit! And I wish I could’ve shared the view with you guys. Pictures are kind of like sharing, right? Now here’s something for you to feast your eyes on:

IMG_5578

I wanted to make something special with the little treasures I found the other day. I decided to start my day with a delicious bowl of overnight oats with the figs. I wanted to share the goodness so I made a bowl for my mom too! Aren’t they beautiful? Almost as beautiful as Eliza and Maya (thanks for the idea, girls). Now I can vouch for the brilliance of fresh figs in oatmeal. I was also inspired by the recipe for those yummy Sicilian fig cookies! Which meant that in this bowl I put in some golden raisins, lemon zest, vanilla extract, cinnamon, cloves, fresh figs, and honey. Since we didn’t have almonds on hand I thought, “hmm that just means I’ll have to use almond butter.” No complaints here! So refreshing and delightful to eat. In the middle of breakfast I decided to cut up a banana and mash it into my bowl. Bananas are never a bad choice in my book.

Grinding my own garam masala.

Grinding my own garam masala.

I find that when you grind your own spices the aroma comes out even more when you’re cooking. Freshly ground cinnamon wafting through the air is such a comforting smell. Everyone will keep asking you with eagerness “when’s dinner ready?”

I was inspired by my favorite dish at my favorite Indian restaurant.

I was inspired by my favorite dish at my favorite Indian restaurant, India K'raja.

The inspiration is a creamy mango sauce with homemade paneer and cooked with nuts and raisins. My take on it included paneer, pineapple, mango, freshly ground garam masala, and almond bits sprinkled on top. I wish I could’ve made more, but we were short on time and had to make due with what was in the house. Since we’re headed on our vacation today we didn’t want to overload on groceries for the week.

Butternut squash and vanilla risotto

Butternut squash and vanilla risotto

I followed this recipe, and I must say – WOW! Every ingredient in this recipe made this dish perfection in my mouth. I realized I had forgotten the salt, thankfully the saltiness from vegetable stock was enough.

Colorful pasta!

Colorful pasta!

IMG_5591I followed Katie’s alfredo sauce recipe but I added a bit of nutmeg to give it a little oomph. I also chose to make it with tofu rather than agar agar, since that’s what I had on hand. Katie, once again, two thumbs up! I love your creative recipes.

I had some leftover sauce so I figured I could mix it with the beets I roasted last night. This was my first attempt at roasting beets. It wasn’t hard, but it was messy! My fingers temporarily turned pink.

It looks funky! I also threw in some rosemary and a drizzle of honey.

It looks funky! I also threw in some rosemary and a drizzle of honey.

Beets can't help but paint everything pink!

Beets can't help but paint everything pink!

Everytime I eat or drink anything with beets I check my cheeks to see if they’re rosy. I swear if you include beets in your life (a lot of them), they are nature’s blush! It sounds like such an old wives tale, but I’d like to believe it.

What’s your favorite old wives tale?

So what’s with the title of this post? A lot of things have happened in my life that have made me take a step back and realize how precious it really is. Usually I don’t discuss my past (sounds like I’m a member of the mafia), but it seems somewhat appropriate right now. During my last week of high school, my boyfriend at the time, Chip, was killed by a fellow classmate. It was a terrible loss on so many people’s parts. Not just for the people who lost Chip, but also for the family and friends of the boy who took his life away. I’m a firm believer in the idea that things happen for a reason, even if it just straight up sucks. Anyway, that moment in my life led me to reevaluate a lot of things – reevaluating is something I think I do constantly, so it wasn’t a first. But I’ve never had someone that close to me pass away. I became very spiritual because I didn’t want to lose that connection I had with him. He was the first person I fell in love with, so it was hard to let go. Plus it’s too depressing to think that this life is it and there’s nothing afterwards. I’m not sure what the afterlife is all about, but I think there is one. I just remember the last time I saw him I was driving home and we happened to be driving next to each other. It was such a nice surprise. He was going to a meeting so we each went out separate ways. I would’ve never thought that waving him goodbye as he was making that left turn would be the last time I would see him. It just shows how life can be so fleeting. Rather than taking this as a “why me” experience in my life, I took it as more of a reason to appreciate life. It’s hard not to step outside and take a big deep breath, look up at the sky and smile at what’s around me. It’s hard to hush my laughter when I just want to burst! If I feel like dancing, I’ll dance. If I “just don’t feel like it”, I honor that feeling as well. So I guess where I’m getting at is that an important part of life for me is to savor the moment. Life should be good, but sometimes things happen, and these things are a part the journey too. Live and learn, and make the best of it.

He was the kind of person who could do something ordinary in a million different ways.

He was the kind of person who could do something ordinary in a million different ways. I noticed the patches of grass made a smiley face!

On a lighter note, I know I’ll be making the best of it while I’m away on vacation. I’m excited to give up daily responsibilities, but I’m going to miss Matilda. This is the first time me and the family will all be separated from her. Thankfully, a family friend of ours offered to take care of her while we’re gone. It’s reassuring to me because it’s hard for me to trust people to take care of her. She’s like my little baby.
